3 Meals with 1 Main Dish: Tasty Ground Turkey Recipes

By Kelly · 2 Comments

Ground Turkey 3 Meals 1 Main

Welcome to Part Two of a delicious new recipe series … 3 Meals with 1 Main Dish!

Since one of the biggest challenges to maintaining a healthy whole food lifestyle is time, I’m sharing this helpful series featuring one of the easiest “Cook Once, Eat Twice or More!” strategies for saving time in the kitchen – batch cooking!

Batch cooking is simply making a large quantity of a particular food and using it to make multiple meals. Last week, we launched Part One of the series and discovered how to use slow cooker rotisserie chicken to make three delicious and healthy soups.

This week, we’re putting this awesome time-saving strategy to work again using ground turkey meat to create three simple healthy recipes.

Ground Turkey

One of the easiest uses for ground turkey is to simply add some taco seasoning to the meat and enjoy a delicious taco night.

However, rather than browning a pound of turkey for just one meal, it only takes a few minutes more to brown 4 to 5 pounds and freeze the rest for future quick-n-easy dinners like these simple healthy meals below. Taking a couple of extra minutes to brown a double or triple portion of ground meat means less cooking {and less dishes} to do later! Now that’s a win-win!

Savory Cottage Pie

Savory Cottage Pie – Comfort food in a bowl! This savory, hearty dish comes together easily (especially when you have precooked ground turkey and leftover mashed potatoes on hand).

Asian Style Lettuce Wraps

Asian Style Lettuce Wraps – This simple one-skillet meal is a flavorful whole food spin on Thai Lettuce Wraps. And with precooked ground turkey on hand, this dish comes together in less than 15 minutes. Talk about fast food!

Sweet Potato Chili

Sweet Potato Chili

Slow Cooker Sweet Potato Chili – Just toss in precooked ground turkey with the rest of the ingredients and let your slow cooker do all of the work! The combination of a spicy, meaty tomato sauce paired with the subtle sweetness of creamy sweet potatoes and an assortment of veggies creates an absolutely incredible chili. Talk about a bowl full of healthy flavor!

Three cheers for three meals made with one main! Be sure to check out Part Three of the Series to learn how to create three delicious meals using slow cooker pulled pork. Yum!

3 Meals with 1 Main Dish: Slow Cooker Roast Chicken

One of the biggest challenges to maintaining a healthy lifestyle is time! Discover how batch cooking can help you create multiple meals while saving time!

Welcome to Part One of a delicious new recipe series … 3 Meals with 1 Main Dish!

As we all know, one of the biggest challenges to maintaining a healthy whole food lifestyle is time! That’s why I’m excited to launch this helpful series featuring one of the easiest “Cook Once, Eat Twice or More!” strategies for saving time in the kitchen – batch cooking!

Batch cooking is simply making a large quantity of a particular food and using it to make multiple meals. This week, we’re putting this awesome time-saving strategy to work with my favorite Slow Cooker Roast Chicken.

One of the biggest challenges to maintaining a healthy lifestyle is time! Discover how batch cooking can help you create multiple meals while saving time!

When it comes to slow cooking a whole chicken, I’m all about getting the biggest bird I can afford (and will fit in my slow cooker). Cooking a big bird means lots of meat for making quick-n-easy weeknight dinners like the ones featured below.

Of course, this easy Rotisserie-Style Slow Cooker Chicken makes a delicious dinner paired with a bed of garlic-infused root veggies. However, I frequently slow cook a whole chicken on the weekend for the sole purpose of saving the meat for future meals, since a 6-pound whole chicken yields about 7-8 cups of shredded meat! Plus, it’s so easy to toss the bones back into the slow cooker to make a nutritious bone broth perfect for soups, stews and more!

Chicken Zoodle Pho Bowl

One of the biggest challenges to maintaining a healthy lifestyle is time! Discover how batch cooking can help you create multiple meals while saving time!

Chicken Zoodle Pho Bowl – A symphony of fresh flavors! This rich broth paired with roast chicken, fresh herbs and a squeeze of fresh lime – along with the slight heat of jalapeño slices and the crunch of bean sprouts, zoodles and shredded carrot – is truly amazing!

Roasted Chicken Chili

One of the biggest challenges to maintaining a healthy lifestyle is time! Discover how batch cooking can help you create multiple meals while saving time!

Roasted Chicken Chili – This tasty chili-style stew is a great way to use roast chicken, and is packed full of spicy, yet mellow flavors! To make this delicious chili Whole30-friendly, simply omit the white beans and add diced zucchini and/or sweet bell pepper instead!

Creamy Chicken & Veggies Soup

One of the biggest challenges to maintaining a healthy lifestyle is time! Discover how batch cooking can help you create multiple meals while saving time!

Creamy Chicken & Veggie Soup – This easy one-pot meal is another delicious way to use shredded roast chicken (or turkey). This recipe also reveals my secret for achieving a creamy, rich flavor without using a single drop of dairy.

Even more easy and delicious ideas … Roast chicken is so versatile, which is why it’s an easy option for creating a whole host of delicious, healthy meals! Here’s a few more of our favorites:
• Chicken Salad Wraps – fresh greens wrapped around a tasty chicken salad filling.
• BBQ Chicken Sliders – mix shredded roast chicken with your favorite BBQ sauce (if you’re doing Whole30, be sure to use a Whole30-compliant BBQ sauce) and serve it on top of tasty Sweet Potato Buns.
• One-Skillet Savory Chicken – save time by tossing in leftover shredded chicken in this simple one-skillet meal!

Three cheers for three meals made with one main! Be sure to check out Part Two of the series where you’ll discover how to create three delicious meals using tasty ground turkey. And in Part Three of the Series you’ll to learn how to create three delicious meals using slow cooker pulled pork. Yum!

Peach Cobbler Donuts (& Muffins!)

By Kelly · 13 Comments

This scrumptious gluten-free, grain-free Peach Cobbler Donut recipe easily comes together to create a delicious cake-like doughnut, or light & fluffy muffin!

Peaches always make me smile! That’s one reason I tend to buy way too many when peach season arrives. This summer, I found an amazing buy one case, get one free deal at the Farmers Market. So guess who came home with two cases of peaches???

Since my youngest loves to bake, I asked him if he had any ideas for something new we could create with our bounty of peachy goodness. Without giving it a second thought, he immediately decided we should make peach cobbler donuts! I’m not sure if I’ve mentioned it or not before – but he’s a bit of a “dough-nut” to say the least!

In fact, he’s actually the idea guy for the other two donut recipes I’ve shared – Apple Cider Donuts and Maple Glazed Pumpkin Donuts (just incase you’re a dough-nut too!).

This recipe doesn’t venture too far from the others in it’s list of simple wholesome ingredients, making it a fun recipe for kids to help with – simply add the ingredients to your food processor and blend.

Being a cookbook author and food blogger is not only fun, it also comes with some nice perks on occasion. For example, my friends over at KitchenAid were kind enough to come to my rescue last summer by sending me a new KitchenAid 11-cup Food Processor when my Cuisinart gave out right in the middle of recipe development for Everyday Grain-Free Baking.

This handy kitchen essential is put to work almost daily, as having a good food processor not only makes putting a recipe together a snap, it also performs a multitude of kitchen tasks from mixing and blending to chopping, slicing and shredding.

In the case of this scrumptious recipe, a food processor allows you to simply add all of the ingredients to one bowl – then blend and you’re ready to bake! I love it when a recipe is simple to make and simple to clean up!

Since this recipe was my sweet son’s brilliant idea, he gets the first bite! Of course, he didn’t stop at just one bite … and I’m betting your family won’t either! They’re seriously just too yummy!

Even better … this recipe can be used to make marvelous muffins too! Just add the batter to a muffin tin, as outlined in the recipe below, and enjoy the most amazing Perfectly Peachy Muffins! Yum!

Peach Cobbler Donuts (& Muffins!)

Ingredients

  • 3/4 cup peeled and diced ripe peaches, divided
  • 1 large egg, plus 1 egg white
  • 1/4 cup pure coconut milk
  • 1/4 cup pure maple syrup
  • 1 Tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • 1 3/4 cups blanched almond flour
  • 1 Tbsp coconut flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt

Instructions

  1. Preheat oven to 350°F. Generously grease a 6-cavity donut pan with palm shortening or coconut oil; set aside. (If making muffins, line a 12-cup muffin tin with 6 parchment liners.)
  2. In a food processor, add just 1/2 cup diced ripe peaches. Then add the remaining ingredients in the order given.
  3. Pulse to combine the ingredients and then blend on low for just a minute to finish combining. Do not overmix.
  4. Add the remaining 1/4 cup diced peaches and pulse just enough to combine, as you do want small peach bits in the batter.
  5. Carefully spoon the donut batter into the prepared donut pan just shy of the fill line. Use your finger or back of spoon to even out the top of the batter. (If making muffins, evenly distribute the batter among the 6 lined muffin cups.)
  6. Bake for 16-18 minutes, until donut springs back when touched. (For muffins, bake 25-28 minutes, until toothpick inserted in center comes out clean.)
  7. Remove from oven and allow the donuts (or muffins) to cool in the pan for 1-2 minutes. Then turn them out onto a sheet of parchment paper. Then, transfer to a wire rack to finish cooling.
  8. Dust the donuts with a little powdered coconut (or powdered sugar). Enjoy!

Notes

To make powdered coconut, simply pulse-blend together 1/4 cup of unsweetened shredded coconut with 1 teaspoon of coconut flour until fine, almost powder-like. Be sure to use the pulse function of your blender and pulse slowly, so you don’t make coconut butter. Use the powdered coconut to add a sugar-free, pretty and tasty decorative effect to your baked goods.
