Southwestern Chicken Burgers

In search of a burger boredom buster?

Break up the burger boredom with these Southwestern Chicken Burgers! And you'll love the toppings as much as you'll love the burgers!

Me too! Mainly because I live in a house of manly men – yes, even the pets are males – and they all love burgers! And of course, let’s not forget the fries.

In fact, if it were up to these guys, it would be burgers and fries every week. (Dare I say multiple times a week?)

Of course I want to keep them happy, and well fed, but I also have to be honest here – plain ole burgers bore me. Hopefully, the die-hard burger lovers out there will forgive me. I don’t mean to be a burger hater. It’s not that I don’t want to like burgers, it’s just that unless they’re packed full of savory seasonings, or come loaded with mounds of flavorful toppings, I’d rather pass.

Enter the burger boredom buster idea … Since The Whole30 Challenge requires a palm-sized serving of meat at each meal, I thought “what’s more palm-sized than a burger?” And since burgers make my guys happy  – which means one less meal to play short-order cook – I was inspired to create a burger that would please anyone who enjoys a well seasoned patty! (And I strategically included a few hidden veggies to add extra flavor and nutrition too!)

As tasty as these burgers are, I still say, bring on the toppings! My favorites? Sliced tomatoes, red onion, avocado and spicy mayo. Confession time … if I wasn’t on the Whole30 right now, you can bet I’d be tossing these babies onto a slightly toasted grain-free bun too! (In fact, my grain-free hamburger bun recipe is one of more than 100 grain-free baking recipes featured in my awesome grain-free baking cookbook! But for now, we’ll be happy with big leafy lettuce-wrapped burgers, after all, they’re yummy too!)

But I digress … the point is, these easy-to-make burgers are so tasty, even this borderline burger-phobe likes them. Especially when they’re paired with Roasted Herb Sweet Potato Bites – they’re so incredibly savory, I’m pretty certain that even your fry-loving family members will find them simply irresistible too.

Now it’s time to fire-up the grill and toss a few flavorful burgers on!

Southwestern Chicken Burgers

Yield: 4 burgers

Ingredients

  • 1.25 lbs ground chicken (preferably dark meat or a mix of white and dark)
  • 1/2 cup fine diced mushrooms
  • 1/4 cup fine diced yellow onion
  • 1/4 cup fine diced red bell pepper
  • 2 tbsp minced fresh cilantro
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Preheat grill to medium-high heat. In a large bowl, add all of the ingredients. Use your hands (or a large fork) to mix together the ingredients until well combined.
  2. Shape into 4 patties. Place on hot grill and cook about 3 minutes per side, until cooked through.
  3. Serve with your favorite toppings such as sliced tomatoes, red onion, avocado and spicy mayo (see note below). And of course, don't forget about those awesome little Roasted Sweet Potato Bites. You'll definitely want those on your plate too!

Notes

To make spicy mayo, start with 1/2 cup of your favorite homemade mayo or Whole30-compliant brand. Add 1/2 to 3/4 teaspoon of hot sauce, 1/4 teaspoon garlic powder and 1/8 tsp sea salt. Whisk together and refrigerate until ready to serve. Yum!

    These look so good and I love that they use chicken. It’s readily available and very inexpensive where I live. Yummy, easy to make and budget friendly make this a winner in my book!

    So, day three of Whole 30. I made a variation of the sweet potato recipe you shared. I tossed mine in a frying pan with some coconut oil and then sprinkled with cinnamon. They were pretty good. My detox headache started Monday afternoon and is finally easying up (48 hours later). I just keep reminding myself of how good I will feel. Already you can see a difference in my face and the way my clothes fit. It must be all the bloat from this past weekend’s loading up on bad carbs that is going down. Just wanted to check in and let you know I’m with you 🙂

      Hang in there, Theresa. I am on Day 20 now and I can’t believe how good I feel. I still have cravings that hit out of nowhere, but that’s about it, and after 20 days, I know better how to manage the cravings – mainly go find something to do and stop thinking about them. LOL!     Made these and loved them. So delicious! We gobbled them up and will definitely make again soon. The only change I made was an addition of cumin to the recipe. I made guacamole to put on top and it sealed the burgers to perfection! Thanks for the recipe. I’m enjoying exploring your site and finding other great meals.
