This is one of my boys favorites and they are always willing to help cook when this is on the menu. In fact they affectionately refer to it as KFC – Kelly’s Fried Chicken. Since drumsticks are their favorite, I buy a large package of 10 organic drumsticks whenever we make this and place the leftover drumsticks in their lunch boxes for the next day. We hope your family enjoys this tasty healthy version of fried chicken too!
I make my own homemade bread crumbs, which is so easy! It’s also much healthier and more economical than most store-brought brands.
Oven Baked Fried Chicken (GF Option)
Ingredients
- 2 large eggs
- 1/3 cup kefir (or buttermilk)
- 1 cup homemade breadcrumbs
- ½ cup fresh grated Parmesan cheese
- 1 ½ tsp dried oregano, crushed
- 1 tsp paprika
- ½ tsp sea salt
- 1/8 tsp freshly ground black pepper
- 8-10 chicken drumsticks, skin on (or assorted chicken pieces, skin on)
- 3 tbsp butter, melted
Instructions
- Preheat oven to 375 degrees. In a small bowl, whisk together egg and kefir (or buttermilk). In a separate bowl, combine bread crumbs, Parmesan cheese, oregano, paprika, salt and pepper. Place bread crumb mixture on a large plate or baking dish to make it easier to dredge the chicken. Dip drumsticks/chicken pieces into egg mixture; then dredge through bread crumb mixture until well coated.
- Place drumsticks/chicken pieces on a well-oiled 12x17-inch baking sheet, making sure pieces don't touch. Use a spoon to drizzle melted butter across top of chicken. Bake for 45 to 55 minutes or until juice of chicken runs clear when poked with a fork. (Do not turn chicken during baking.) Enjoy!

AMAZING!! My husband was craving fried chicken so I decided to give this a try. I am GF so used GF bread crumbs for mine and couldn’t tell a difference! It was gobbled up by all (which is saying a lot for my 2 yr old daughter =) All the flavors blended perfectly and I loved the way the kefir (never used plain kefir in a recipe before) / egg mixture put a nice thick coat on the chicken before dipping!! THANK YOU!!

I made this tonight for the second time and my family loved it! It is delicious and relatively easy once the bread crumbs are made. My three year old son gets such a kick out of eating it off the bone and I’m pleased to be able to feed him something healthy that he loves! My husband likes it a lot too. Thanks for coming up with these great recipes and sharing them with the rest of us. Blessings, Kelly!

I have made this probably 5 times in the last two weeks because my husband keeps asking for it! We LOVE it! Is it ok if I share the recipe on my blog? {I’ll give all credit to you of course, and link back to your blog!!}

Hi, Katie. I’m so happy that you and your hubby are enjoying this recipe, so much so that you’d like to tell the world (or at least your readers). If you could please follow the format Laura at Heavenly Homemakers did in sharing about her obsession with my raw cookie dough bites, I’d appreciate it. Here is the link for your reference: http://heavenlyhomemakers.com/raw-cookie-dough-bites-somebody-stop-me-from-eating-them-all
As you can see, the way Laura shares with her readers about my recipe is both helpful to them, and careful to follow copyright law. So in other words, following her example of writing about why you love this recipe and sharing photos of what it looks like when you make it are fine, but unless you’ve significantly altered the recipe, then the proper way to share is to send your readers to my site for the actual recipe rather than copying it and placing it on your sight.
I appreciate you asking the best way to share a recipe you like, as you’d be surprised at how many people simply copy and paste a recipe verbatim with a link to the original site and think that is okay, when in fact it is a violation of copyright law.
So thank you again for your kind words and your thoughtfulness and consideration in asking how to share your excitement about this recipe with your readers. If you have any further questions, feel free to email me. And also, you may want to read through this discussion on copyright law from Food Blog Alliance, just for future reference: http://foodblogalliance.com/a/recipe-attribution/
Thanks again! Many blessings to you, Kelly 🙂

We LOVE fried chicken in this house and I have tried healthier oven baked versions in the past but either the breading doesn’t stay on after the chicken is cooked or the flavor and crunch just isn’t there. This recipe is absolutely delicious and so inexpensive to make! I now have a favorite go to oven baked fried chicken recipe! I really appreciate all the time and effort you put into sharing your recipes, menus, tips and tricks with us! You have changed the way we eat in our house for the better! Thank You!
