Oven Baked Fried Chicken (GF Option)

This is one of my boys favorites and they are always willing to help cook when this is on the menu. In fact they affectionately refer to it as KFC – Kelly’s Fried Chicken. Since drumsticks are their favorite, I buy a large package of 10 organic drumsticks whenever we make this and place the leftover drumsticks in their lunch boxes for the next day. We hope your family enjoys this tasty healthy version of fried chicken too!

I make my own homemade bread crumbs, which is so easy! It’s also much healthier and more economical than most store-brought brands.

Oven Baked Fried Chicken (GF Option)

4-5 servings

Oven Baked Fried Chicken (GF Option)

Ingredients

  • 2 large eggs
  • 1/3 cup kefir (or buttermilk)
  • 1 cup homemade breadcrumbs
  • ½ cup fresh grated Parmesan cheese
  • 1 ½ tsp dried oregano, crushed
  • 1 tsp paprika
  • ½ tsp sea salt
  • 1/8 tsp freshly ground black pepper
  • 8-10 chicken drumsticks, skin on (or assorted chicken pieces, skin on)
  • 3 tbsp butter, melted

Instructions

  1. Preheat oven to 375 degrees. In a small bowl, whisk together egg and kefir (or buttermilk). In a separate bowl, combine bread crumbs, Parmesan cheese, oregano, paprika, salt and pepper. Place bread crumb mixture on a large plate or baking dish to make it easier to dredge the chicken. Dip drumsticks/chicken pieces into egg mixture; then dredge through bread crumb mixture until well coated.
  2. Place drumsticks/chicken pieces on a well-oiled 12x17-inch baking sheet, making sure pieces don't touch. Use a spoon to drizzle melted butter across top of chicken. Bake for 45 to 55 minutes or until juice of chicken runs clear when poked with a fork. (Do not turn chicken during baking.) Enjoy!

    AMAZING!! My husband was craving fried chicken so I decided to give this a try. I am GF so used GF bread crumbs for mine and couldn’t tell a difference! It was gobbled up by all (which is saying a lot for my 2 yr old daughter =) All the flavors blended perfectly and I loved the way the kefir (never used plain kefir in a recipe before) / egg mixture put a nice thick coat on the chicken before dipping!! THANK YOU!!

    I made this tonight for the second time and my family loved it! It is delicious and relatively easy once the bread crumbs are made. My three year old son gets such a kick out of eating it off the bone and I’m pleased to be able to feed him something healthy that he loves! My husband likes it a lot too.     We LOVE fried chicken in this house and I have tried healthier oven baked versions in the past but either the breading doesn’t stay on after the chicken is cooked or the flavor and crunch just isn’t there. This recipe is absolutely delicious and so inexpensive to make! I now have a favorite go to oven baked fried chicken recipe! I really appreciate all the time and effort you put into sharing your recipes, menus, tips and tricks with us! You have changed the way we eat in our house for the better! Thank You!
