Southern-Style Strawberry Shortcake Biscuits

Yield: 6 shortcake biscuits

Ingredients

    Shortcake Biscuits
  • 2½ cups blanched almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ¼ cup butter or coconut oil, melted
  • 1 tablespoon pure honey
  • 2 large eggs
  • ¼ teaspoon pure vanilla extract
  • Strawberry Topping
  • 1 pound fresh ripe strawberries (or thawed frozen berries)
  • 1 tablespoon honey
  • Optional: Whipped Coconut Cream

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper; set aside.
  2. For the Biscuits: In a small bowl, combine almond flour, baking soda, and salt. In a medium bowl, whisk together melted butter or coconut oil and honey until smooth. Add the eggs and vanilla, whisking together until well combined. Using a spoon, stir the dry mixture into the wet mixture until thoroughly combined. Place dough in fridge to cool about 10 minutes.
  3. For the Strawberry Topping: Slice the strawberries and toss with honey. If using, prepare the whipped coconut cream. Refrigerate until ready to serve.
  4. Once biscuit dough is chilled, scoop a large spoonful of batter into your hands and roll into a ball about the size of an apricot; repeat until you have made six. Place the dough balls on the parchment-lined baking sheet and gently flatten using the palm of your hand.
  5. Bake about 15 minutes, until golden brown on top and a toothpick inserted into center comes out clean.
  6. Split the warm biscuits in half and top with a couple of heaping spoonfuls of strawberry topping and a dollop of whipped coconut cream, if desired. A delightful treat for breakfast or dessert!

By the way, if fresh or frozen strawberries aren’t available in your neck of the woods, there’s no need to fret. This is one delightful recipe that you can truly enjoy year-round. That’s because these tasty biscuits are perfect topped with virtually any fruit of your choice.

In the winter, when kiwi fruit is in peak season, there’s nothing as wonderful as topping these delightful biscuits with fresh sliced kiwi and bananas. And when summer arrives, we love to pile on fresh sliced peaches, or mounds of summer berries, such as raspberries and blackberries.

So whichever seasonal fruit tickles your fancy, I hope these special Southern-style shortcake biscuits become a cherished favorite in your home too!

Dairy-Free Whipped Coconut Cream {Simple & Delicious}

Whipped coconut cream is the perfect replacement for dairy-based whipped toppings, since it’s just as smooth and light. Plus, it takes just minutes to whip up.

Whipped coconut cream is the perfect replacement for dairy-based whipped toppings, since it’s just as smooth and light. Plus, it takes just minutes to whip up and adds a wonderful touch of creamy sweetness to your favorite grain-free, dairy-free desserts and beverages.

The secret to getting fluffy whipped coconut cream is making sure to use just the thick solid layer of coconut cream that rises to the top of a can of pure coconut milk when its chilled completely. Of course, you can also use chilled pure coconut cream, if you’d prefer.

A little trick to more easily scoop out the cream from a can of chilled coconut milk is to open the can from the bottom. You can then pour off the coconut water and save it for another use (like smoothies). Then, simply spoon the remaining coconut cream into a pre-chilled mixing bowl and whip it into a delightfully smooth and creamy treat by following the recipe below. So easy and delicious!

Whipped Coconut Cream (Dairy-Free)

Yield: approx 2 1/2 cups

Ingredients

  • 2 cans (13.5-ounce) pure coconut milk, refrigerated overnight
  • 1-2 tsp honey (omit for Whole30)

Instructions

  1. Place a large mixing bowl and the beaters (or whisk attachment) into the freezer for 2–3 minutes to thoroughly chill.
  2. Remove the cold coconut cream from the 2 cans of cold coconut milk and place into the chilled mixing bowl. An easy way to do this is to open the cans from the bottom and carefully pour off the coconut water into a small mason jar for another use. This makes it easier to scoop out just the coconut cream. Or you can use pure coconut cream instead, which does not require removing the coconut water.
  3. Using a stand mixer fitted with the whisk attachment, or an electric mixer, mix at high speed approximately 2–3 minutes, until fluffy and creamy.
  4. Add the honey, if using, and continue to mix until the coconut cream is light and fluffy (about 1–2 minutes), scraping down the sides of the bowl as needed.
  5. Use immediately, or refrigerate for up to 2 days. Just be sure to whip cold coconut cream for a minute or so to ensure that it’s light and fluffy.

Notes

It’s a good idea to keep a couple of cans of coconut milk (or pure coconut cream) in your refrigerator so you always have it on hand for recipes such as this one.

One of my family’s favorite Christmas traditions is to make homemade gifts in a jar. And the wonderful thing is, they’re as much fun to make together, as they are to give to others! Simply layer the ingredients of a favorite recipe in a mason jars, then add a festive ribbon and tag, and there you have it – a thoughtful gift made with love.

There are certainly a ton of mason jar gift ideas out there, but unfortunately, many rely on unhealthy ingredients. So I thought it would be fun to share just a few of my favorites with the hope that this may help you to create some healthy homemade gifts of your own!

My Favorite GF Whole Food Mason Jar Gift Recipes

Fruit & Nut Bars-in-a-Jar1. Fruit-in-Nut Bars in a Jar – These mock KIND Fruit-n-Nut Bars have been one of the most popular recipes I’ve posted this year. I modified the recipe a bit so it makes a beautiful and delicious gift-in-a-jar.

2. Slow Cooker Spiced Holiday Nuts – This year, we’ll be spreading holiday cheer with this delightful Spiced Holiday Nuts Gift-in-a-Jar recipe. These tasty nuts capture the aroma and flavor of the holiday season with just a hint of cayenne, giving them an extra kick of flavor. Honestly, it’s almost impossible to stop eating them!

3. Festive Little Gingersnaps in a Jar – Slightly crispy along the edges with a sweet-n-spicy chewy center, these scrumptious little grain-free gingersnap cookies make a thoughtful holiday gift! I like to stack them in recycled mason jars and dress-them-up with festive ribbons and bows.

4. “Season’s Greetings” in a Jar – This savory all-purpose seasoning mix makes a wonderful gift, especially when paired with my free recipe card printables.

9. Healthy Homemade Granola Gifts-in-a-Jar – the delicious versatility of homemade granola (and this simple healthy homemade granola bars recipe) makes it a thoughtful and welcomed gift!

10. Homemade Doggie Treats Gift-in-a-Jar – don’t forget your furry little friends! Doggies love homemade treats too! Take it from my pup Frankie, these easy Sweet Potato Puppy Treats are tail waggin’ good!

Tips for Creating Your Own Homemade Gifts …

vertical-seasonmixMany recipes can be converted into beautiful gifts-in-a-jar. When thinking about which of your favorite recipes will work well as a gift-in-the-jar, it’s important to consider the following:
• Will the recipe ingredients fit in a standard size mason jar, such as a half-pint, pint or quart?
• How easy is the recipe to assemble? Are the additional items needed to complete the recipe standard ingredients that most people have on hand?
• How will you include instructions for making the recipe? (My preferred option is to include the instructions inside a holiday greeting card and place the card and gift jar into a recycled gift bag.)
• What are the storage requirements for the gift jar – should it be refrigerated or stored at room temp? And for how long? (Be sure these are included in the instructions, or explained to the recipient.)
