Peaches always make me smile! That’s one reason I tend to buy way too many when peach season arrives. This summer, I found an amazing buy one case, get one free deal at the Farmers Market. So guess who came home with two cases of peaches???

Since my youngest loves to bake, I asked him if he had any ideas for something new we could create with our bounty of peachy goodness. Without giving it a second thought, he immediately decided we should make peach cobbler donuts! I’m not sure if I’ve mentioned it or not before – but he’s a bit of a “dough-nut” to say the least!

This scrumptious gluten-free, grain-free Peach Cobbler Donut recipe easily comes together to create a delicious cake-like doughnut, or light & fluffy muffin!

In fact, he’s actually the idea guy for the other two donut recipes I’ve shared – Apple Cider Donuts and Maple Glazed Pumpkin Donuts (just incase you’re a dough-nut too!). 

This recipe doesn’t venture too far from the others in it’s list of simple wholesome ingredients, making it a fun recipe for kids to help with – simply add the ingredients to your food processor and blend.

Being a cookbook author and food blogger is not only fun, it also comes with some nice perks on occasion. For example, my friends over at KitchenAid were kind enough to come to my rescue last summer by sending me a new KitchenAid 11-cup Food Processor when my Cuisinart gave out right in the middle of recipe development for Everyday Grain-Free Baking.

This handy kitchen essential is put to work almost daily, as having a good food processor not only makes putting a recipe together a snap, it also performs a multitude of kitchen tasks from mixing and blending to chopping, slicing and shredding.

In the case of this scrumptious recipe, a food processor allows you to simply add all of the ingredients to one bowl – then blend and you’re ready to bake! I love it when a recipe is simple to make and simple to clean up!

Since this recipe was my sweet son’s brilliant idea, he gets the first bite! Of course, he didn’t stop at just one bite … and I’m betting your family won’t either! They’re seriously just too yummy!

Peach Cobbler Donuts (& Muffins!)

Ingredients

  • 3/4 cup peeled and diced ripe peaches, divided
  • 1 large egg, plus 1 egg white
  • 1/4 cup pure coconut milk
  • 1/4 cup pure maple syrup
  • 1 Tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • 1 3/4 cups blanched almond flour
  • 1 Tbsp coconut flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt

Instructions

  1. Preheat oven to 350°F. Generously grease a 6-cavity donut pan with palm shortening or coconut oil; set aside. (If making muffins, line a 12-cup muffin tin with 6 parchment liners.)
  2. In a food processor, add just 1/2 cup diced ripe peaches. Then add the remaining ingredients in the order given.
  3. Pulse to combine the ingredients and then blend on low for just a minute to finish combining. Do not overmix.
  4. Add the remaining 1/4 cup diced peaches and pulse just enough to combine, as you do want small peach bits in the batter.
  5. Carefully spoon the donut batter into the prepared donut pan just shy of the fill line. Use your finger or back of spoon to even out the top of the batter. (If making muffins, evenly distribute the batter among the 6 lined muffin cups.)
  6. Bake for 16-18 minutes, until donut springs back when touched. (For muffins, bake 25-28 minutes, until toothpick inserted in center comes out clean.)
  7. Remove from oven and allow the donuts (or muffins) to cool in the pan for 1-2 minutes. Then turn them out onto a sheet of parchment paper. Then, transfer to a wire rack to finish cooling.
  8. Dust the donuts with a little powdered coconut (or powdered sugar). Enjoy!

Notes

To make powdered coconut, simply pulse-blend together 1/4 cup of unsweetened shredded coconut with 1 teaspoon of coconut flour until fine, almost powder-like. Be sure to use the pulse function of your blender and pulse slowly, so you don’t make coconut butter. Use the powdered coconut to add a sugar-free, pretty and tasty decorative effect to your baked goods.

Made with protein-packed blanched almond flour and naturally sweetened with honey, these little one-bite-wonders are definitely a healthier option that doesn’t compromise when it comes to rich, decadent flavor.

These grain-free Chocolate Dipped Raspberry Brownie Bites are incredibly easy to make and are far healthier than you might think!

The combination of sweet and tangy fresh raspberries with rich dark chocolate is truly spectacular, which is exactly why this recipe must come with a warning label … it’s next to impossible to eat just one!

Chocolate Dipped Raspberry Brownie Bites (GF, DF option)

Yield: 3 dozen brownie bites

Ingredients

    For the Brownie Bites:
  • 3/4 cup blanched almond flour
  • 1 tsp coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup unsalted butter (or palm shortening)
  • 1/2 cup dairy-free mini chocolate chips
  • 3 Tbsp unsweetened cocoa powder
  • 3 large eggs, room temperature
  • 1/2 cup honey
  • 2 tsps pure vanilla extract
  • For the Ganache:
  • 1/2 cup dairy-free mini chocolate chips
  • 1 tsp butter (or palm shortening)
  • 1 tsp honey
  • 6oz fresh raspberries

Instructions

  1. Preheat oven to 325°F. Generously grease a 24-cup mini-muffin tin with palm shortening, or use parchment paper mini muffin liners. (To make regular brownies, lightly oil an 8”x8” baking dish.) Set aside.
  2. To make the Brownie Bites: In a small bowl, mix together the almond flour, coconut flour, baking soda, and salt; set aside.
  3. Cut the butter into chunks. Then place the butter chunks (or palm shortening) into a small saucepan and melt over medium heat. Add the chocolate chips and the cocoa powder. Stir until the chocolate chips begin to soften. Then remove from heat and continue stirring until the chocolate chips are completely melted and the mixture is well combined. Set aside to cool.
  4. In a large bowl, add the eggs, honey, and vanilla. Whisk together until well combined. Then slowly whisk in the cooled chocolate mixture, using a rubber spatula to get all of the chocolate mixture out of the saucepan.
  5. Slowly add the dry ingredients to the wet while whisking vigorously. Continue whisking until no lumps remain.
  6. Spoon the batter into the prepared muffin wells, until 2/3 full. (Or pour the batter into the prepared baking dish, if making regular brownies.) Please note: Batter will yield 3 dozen brownie bites. So if you don’t have 2 mini-muffin tins, it’s much easier to use parchment liners. That way, there’s no need to wash the muffin tin before putting the final dozen in the oven.
  7. Bake for approximately 15 minutes until a toothpick inserted into center comes out clean. (If making brownies in 8x8-inch pan, bake for 25-28 minutes.) Remove from oven and allow to cool 3-4 minutes, then turn out the brownie bites onto a clean countertop or kitchen towel to finish cooling. (If you didn’t use parchment liners, run a knife around each brownie bite and slide them out while they’re still slightly warm.)
  8. To make the Ganache: Once brownie bites are cooled. Make the ganache by adding all of the ganache ingredients to a small saucepan and heating over low heat just until melted. Whisk well and transfer to a shallow dish.
  9. Dip each raspberry half into the ganache using a scooping motion to capture a nice dollop of the chocolate. Place the raspberry chocolate side down onto the center of the brownie bite.
  10. Sprinkle tops with a little organic powdered sugar or fine-ground unsweetened coconut to add a decorative touch, if desired. Enjoy!

Recently, I got on a dried strawberry kick and couldn’t stop myself from eating them. Seriously! I was putting these awesome “Strawberry Chips” (as my youngest calls them) in and on everything.

First, it started with creating an absolutely scrumptious Dairy-Free Strawberry Frosting that basically you’ll want to spread on everything!

So why my fascination with these freeze-dried strawberries? Well, my friends at Honeyville were kind enough to send me a sample of their freeze-dried strawberries so I could create that yummy strawberry frosting. And since then, I’ve gone a little overboard coming up with even more tasty ways to enjoy them … as you’ll soon discover …

Although you can purchase freeze-dried strawberries from quality retailers like Honeyville, for most recipes, you can substitute with dehydrated strawberries instead. I’ve found that the best flavor comes from strawberries that are fully ripened. So if your fresh berries are beginning to get overripe, why not make a batch of delicious dried berries that can be used to add a sweet burst of flavor to your favorite recipes.
