GF Berry Breakfast Cobbler

This beautiful and berry-licious breakfast cobbler comes from Katie at This Chick Cooks. It’s just one of the many delightful recipes featured in the “Healing Candida with Food” cookbook by Paula Miller of Whole Intentions.

In fact, 25 real food bloggers have contributed more than 130 healthy whole food recipes in an effort to assist Paula with her vision to create a comprehensive resource for those seeking to heal from candida.

And although I don’t strictly adhere to a candida diet protocol, I’m honored to be one of the real foodies featured in this book, sharing some of my most popular dinner recipes as a means to help others on their real food journey of healing.

I must say that I found this book fascinating. It’s not only an excellent compilation of real food recipes, but also a thorough educational resource – walking readers through a step-by-step method for understanding the impact of candida and how to best combat it through a proven candida diet protocol. The book itself is based on the three-stage candida diet plan formulated by noted naturopath Dr. Eric Bakker, who’s been successfully treating candida for more than 20 years.

Berry Breakfast Cobbler (GF)

Yield: 5-6 servings

This wonderful recipe comes from Katie at This Chick Cooks, and is just one of the many healthy recipes featured in the “Healing Candida with Food” Cookbook.

Ingredients

    Berry Filling
  • 1 1/2 cups fresh (or thawed frozen) blackberries, blueberries or combination
  • 1/4 cup unsweetened organic applesauce
  • 1/4 cup pure honey
  • 2 tbsp arrowroot powder (plus 2 tbsp water)
  • Coconut Crust:
  • 1/2 cup coconut flour
  • 1/2 cup finely shredded unsweetened coconut
  • 2 large eggs
  • 1/4 cup butter, melted (or coconut oil)
  • 1/4 tsp sea salt

Instructions

  1. Preheat oven to 400 degress. Lightly grease an 8x8-inch baking dish with coconut oil; set aside.
  2. In a medium saucepan, over medium heat, mix together the applesauce, honey and berries.
  3. In a small bowl, whisk together the arrowroot powder with two tablespoons of water. Then add the arrowroot liquid to the berries and stir well to combine.
  4. Bring the berry mixture to a simmer and cook for 3-5 minutes until berries soften. Then remove from heat and allow filling to cool a bit.
  5. In a medium bowl, make the coconut crust by whisking together the shredded coconut, eggs, butter and salt. Then use a spoon to stir in the coconut flour until mixture is well combined.
  6. Press half of the coconut crust into the baking dish. Pour the berry mixture over the crust. Then use your hands to crumble the remaining crust over the berries.
  7. Bake for 12-15 minutes, until top is lightly golden brown. Makes a delicious brunch side dish, or serve it for dessert with a scoop of vanilla ice cream.

I’m thrilled to have my dear friend Tiffany from Don’t Waste the Crumbs join us to share her tips and encouragement on how we can teach our kids about where real food really comes from.

By taking a family field trip to a beautiful u-pick farm, Tiffany documents how easy and FUN it is to teach your children about real food!

And she’s also sharing more than 20 delicious and nutritious ways to enjoy fresh, ripe summer strawberries! YUM!

Learning Where Real Food Comes From …

As a mother who also happens to be a real food blogger, it should be a given that my kids know what real food is, and where it comes from.

That’s why I feel like cringing when one of my kids pipes up with “we can just get more from the store,” if we happen run out of something. Yikes!

Thankfully, I had a hands-on opportunity last week to teach them where food really comes from – God’s beautiful and bountiful earth.

We traveled to a local u-pick farm where the kids were able to walk through row after row of beautiful strawberry plants – giving us all the opportunity to observe the berries in their various stages of development and better understand the connection between these fields and our kitchen table.

As we journeyed, plants overflowing with strawberries surrounded us on both sides. The kids quickly learned how green and pink berries aren’t yet ready to be picked, but to look for the big, “red red red” strawberries instead. With each step, they excitedly found more and more ripe strawberries and with a little bit of muscle, were able to pick them off of the plants themselves. Their red stained faces were evidence that a few strawberries were “accidentally” eaten, yet their buckets were still nearly full before we even made it to the end of the first row!

Conversations in the field were easy – they already knew that God made the earth and everything in it. But this trip helped them to understand that God causes food to grow from the ground, that people have to use their hands and work to get cultivate and pick it – all so we can eat it and nourish our bodies.

When our buckets were full, we took them to be weighed. Between three adults and two kids, we managed to pick just under 11 pounds of strawberries!

We brought our bounty home and our real food education continued … the kids helped me wash the berries using homemade natural produce wash and we talked about how nutritious strawberries are and what kinds of ways we might enjoy them.

The kids had permission to eat as many as they wanted, yet even with their little hands continuously reaching into the bowl (and mommy continuously refilling it), the flat of berries still looked to be completely untouched!

It was clear that if we were ever going make a dent in the 11 pounds of fresh strawberries we brought home, I would need to get serious about gathering a lot more healthy and delicious strawberry recipes (and I would also need to get serious about Freezing, Blending and Dehydrating them too)!

After talking to a few of my favorite real foodie friends, I’ve put together a plethora of strawberry recipes – more than enough to cover our bountiful pickings AND yours too!

There are so many ways you can teach your children about real food – from something as simple as visiting a local farmers market, to getting hands-on and planting a garden together or visiting a local u-pick farm.

In the mood to pick real food?

Start here to find a u-pick farm in your area. Be sure to call ahead for availability, and don’t be afraid to ask the farms for recommendations of other u-pick sites too, if one close you isn’t listed. Our local farm gave us a huge map of all the u-pick farms in our area – many more than we were able to find online and this enabled us to find a few more farms to visit that are closer to home!

Visiting a u-pick farm is not only a great way to teach your kids about where real food comes from, but it’s also a great way to save money too. This field trip taught us that by doing the work ourselves and eliminating the cost of packaging, handling and shipping we were able to enjoy far more fresh produce for far less. At left are the same strawberries, picked by the local farm, for sale in their local shop. As you can see, by picking the berries ourselves and bypassing the packaging, we saved over $17. The cost of the kids learning where our food comes from?  Priceless.

Spicy Tropical Fruit Skewers {Grilled}

I must confess, grilled fresh, sweet, ripe fruit is truly one of my favorite summertime desserts! The naturally occurring sugars are enhanced via the grilling process – transforming the fruit into an irresistible treat that pairs beautifully with the creamy, cold addition of some homemade ice cream.

On my recent trip to the beautiful state of Tennessee to visit family, my Mom and I found a gorgeous selection of fresh tropical fruits at a local market and decided to create a grilled dessert kebob with a “kick!” That’s because, we secretly added a dash of cayenne pepper to the grilling glaze to give these tropical fruit skewers a hint of heat that leaves you begging for more – or maybe it’s just me?

P.S. For an incredibly luscious breakfast treat, double the recipe and refrigerate the leftover grilled fruit. Then layer the chilled fruit in individual serving dishes with Greek yogurt and homemade granola for an unforgettable Tropical Fruit Parfait! YUM!

Spicy Tropical Fruit Skewers {Grilled}

Ingredients

    Spicy Fruit Glaze:
  • 1/4 cup pure maple syrup
  • 1 tsp olive oil
  • 1/4 tsp ground cinnamon
  • 1/8 tsp cayenne pepper (or more for extra kick)
  • Fruit Skewers:
  • 1-2 cups of fresh pineapple chunks
  • 1 fresh organic mango, peeled and cut into chunks
  • 1-2 kiwis, peeled and thick-sliced
  • 1 large banana, peeled and thick-sliced
  • Optional: Homemade Vanilla Ice Cream

Instructions

  1. Preheat grill to medium-high heat making sure grill is thoroughly preheated before you begin grilling.
  2. In a small bowl, whisk together the Spicy Fruit Glaze ingredients; set aside. (If using bamboo skewers, be sure to soak them in warm water while you’re preparing the rest of the ingredients.)
  3. Cut fruit into cubes/slices that can be easily thread onto a skewer. Be sure to keep them all about 2×2-inches in size, so they’ll cook evenly. (Speaking of which, feel free to add additional tropical fruits as well – papaya and starfruit are also delicious options!)
  4. Brush sweet-n-spicy glaze evenly among fruit skewers, making sure to generously brush both sides.
  5. Cook fruit uncovered over medium heat just long enough to form grill marks (about 1-2 minutes). Then, carefully turn the fruit skewers over and brush with remaining glaze, if desired. Cook for about another 1-2 minutes, until lightly browned and caramelized.
  6. Serve with a scoop of your favorite homemade vanilla ice cream. Sprinkle top with some toasted unsweetened shredded coconut, if desired.

Notes

Since grill temperatures can vary dramatically, be sure to keep a close eye on your fruit skewers. The goal here is to simply sear the exterior of the fruit to produce a rich caramelized flavor, not to cook the fruit through. Enjoy!
