With Memorial Day Weekend just around the corner, I’m excited to share a quick-n-easy classic appetizer that will have your family and friends begging for more!

This Ultimate Pico de Gallo recipe also gives me the opportunity to share about what a huge difference it makes when you have a set of quality kitchen knives. My personal favorite is the Wusthof Knife Collection. Having a set of quality knives truly makes food prep a whole lot easier and safer too!

Learn how to make the ultimate pico de gallo. This quick and easy recipe will have your family and friends begging for more! It also makes a great guacamole too!

Of course, the two most essential knives in any home chef’s kitchen are the chef’s knife and the pairing knife. Both are used daily, which is why it’s so handy that Wusthof has packaged them together into one set, along with another tried-n-true favorite the handy-dandy utility knife. These knives make creating fresh, healthy dishes so much easier, such as this delicious Pico de Gallo recipe.

It may seem like it would take a lot of time to dice up all of these wholesome ingredients, but it actually takes just a few minutes. And of course, it’s totally worth it when you see the smiles on your family’s faces as they gobble up this tasty recipe with lots of “oohs and aahs!” 

Plus, you can use this amazing pico de gallo to create my Secret Ingredient Guacamole and Fresh Pineapple Salsa – talk about “oohs and aahs!”

The Ultimate Pico de Gallo (GF, DF, Whole30)

Yield: 3 cups

Ingredients

  • 2 1/2 cups diced plum tomatoes (about 5-6)
  • 1/2 cup fine-diced red onion
  • 1/4 cup fresh chopped cilantro
  • 1 small jalapeño, finely minced
  • 1 clove garlic, finely minced
  • Juice of 1 lime
  • 1/2 teaspoon sea salt

Instructions

  1. Carefully dice the plum tomatoes. An easy method is to quarter the tomatoes and then cut each quarter in half, as shown in the photo above. Remove the membrane and any excess seeds. Then, dice into small bite-sized pieces.
  2. In a medium bowl, add all of the pico de gallo ingredients and toss well to combine. Taste and add additional salt, if needed.
  3. Transfer to a serving dish and enjoy with your favorite chips! It’s also the perfect addition to your favorite Tex-Mex-style recipes, and can be used as the base for making Fresh Pineapple Salsa and The Best Guacamole in town!

Like most families, we have our share of picky eaters. I’m sure you know what I mean, and if you don’t, count yourself blessed. Despite my best efforts, somewhere around the age of 8 or 9 years old, my boys adopted the philosophy that “if it’s green, it’s yucky!” Boo to that, so I’ve been on a mission to counter it with … “greens are great!”

Since the theme this month over at Keeper of the Home is how to prepare and enjoy healthy seasonal produce, I thought it only fitting to share my affinity for Swiss Chard – not only because its mild flavor makes it the perfect green to introduce to those picky eaters in your family, but also because it’s a powerhouse of nutrition.

So I invite you to join me to learn more about the many health benefits of Swiss chard, as well how to properly select, store and prepare it – and of course, be sure to grab the recipe for my deliciously easy, one-skillet Swiss Chard & Shrimp Sauté, which features another veggie favorite around here – zoodles!

Simple Mother's Day Brunch Menu

Hosting a simple, yet elegant Mother’s Day Brunch is a wonderful way to celebrate the special women in our lives.

Simply dress up your table with some pretty linens and fresh flowers – it’s amazing what a simple tablecloth and flowers can do to dress up the table! And don’t be shy about borrowing extra dishes, china or serving platters from family or friends. Personally, I love the eclectic look of mismatched dishes and platters.

Most important, keep the menu simple, yet delicious. A selection of easy recipes that you can prepare in advance makes it much easier to put together a beautiful and tasty gathering with very little stress.

To help, I’m sharing one of my favorite brunch menus perfect for Mother’s Day, hosting a bridal or baby shower, or just for sharing a fun afternoon with good friends. I’ve even included notes about when I typically prepare these foods. As you can see, little cooking is necessary the day of the event, leaving plenty of time, to tidy up the house a bit, set the table and enjoy a wonderful time of fellowship!

Southwest Breakfast Casserole

(make this the day before, and warm in oven just before guests arrive)

Cucumber Dill Sandwiches
Cucumber-Dill Sandwiches on Grain-Free Classic Brown Bread

(make the bread the evening before your party; spread herbed cream cheese
on bread and layer with cucumbers and fresh dill)


Grain-Free Blueberry Lemon Scones

(these are best when made the morning of your party)

Frugal Dips
Assorted Fruit or Veggie Tray with Favorite Dips

(make this up to two days in advance of your party, keep refrigerated)
