Open-Face Waffle Sandwich

Another quick and healthy breakfast or lunch, these are one of my boys’ favorites that we like to make when we have leftover homemade waffles. (P.S. Got leftover pancakes? They also taste great too topped with nut butter, raw honey and fruit!)

Open Face Waffle Sandwiches
Leftover Homemade Waffles (or pancakes)
Your favorite all-natural nut butter
Raw honey
Sliced organic fruit of your choice
Chopped nuts (we love macadamia for this recipe)

Reheat waffles in toaster oven on low setting. In a small dish, combine 2/3 parts nut butter with 1/3 part raw honey. Spread honey-nut butter on toasted waffle and top with sliced fresh fruit and chopped nuts. YUM!

Good Morning Breakfast Burrito

It’s always a good morning to wake up to a delicious hearty breakfast!

My favorite thing about making breakfast burritos is that you don’t really need a formal recipe to follow. In fact, most of the time I use leftover Huevos a la Mexicana to create them and roll them right up in a gluten-free tortilla with a little lacto-fermented salsa. And if you have leftover oven roasted potatoes, toss those in too for a delicious egg-n-potato burrito!

Below is yet another version that we like, so feel free to use it as a springboard for creating your own amazing healthy breakfast burrito concoctions!

Good Morning Breakfast Burrito

Ingredients

  • 2 gluten-free tortillas, warmed
  • 2 eggs
  • 1 tbsp filtered water
  • 1 tbsp finely chopped fresh organic cilantro
  • ¼ cup finely diced organic zucchini
  • 3 green onions, finely diced
  • 2 strips of uncured, nitrate-free, cooked bacon or sausage, chopped
  • salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together eggs, milk and cilantro. Chop zucchini and onion.
  2. Preheat skillet over medium-high heat. Add about a tablespoon of olive oil to the pan and sauté zucchini and onion together until zucchini is al dente. Transfer to a small bowl.
  3. Turn down heat to medium, wipe skillet and evenly distribute a fresh coating of butter or olive oil across bottom of pan. Add egg mixture and scramble eggs until almost cooked through. Then toss in the sautéed veggies and chopped meat and scramble together to combine.
  4. Place egg scramble in center of a warm tortilla and top with shredded raw cheese, lacto-fermented salsa and cultured sour cream. Roll-up and enjoy!

Cheesy-Basil Eggs (GF)

The first time I tried this delightful creation of my mother-n-law, I knew this recipe was going to be a family favorite in our home too! The combination of basil and cheese with light and fluffy scrambled eggs is simply delectable! Cheesy-Basil Eggs are perfect on their own, or as a delicious side-dish with pancakes or waffles.

Cheesy-Basil Eggs

Yield: 4-5 servings

Cheesy-Basil Eggs

Ingredients

  • 8 large eggs
  • 1/3 cup plain almond milk
  • 1/4 tsp dried basil (rub between your fingers to release oils and flavor)
  • 1/2 tsp sea salt
  • Dash of freshly ground pepper
  • 1/2 cup grated raw milk cheese

Instructions

  1. Heat large skillet over medium-high heat. In a large bowl, whisk together eggs, milk, basil, salt and pepper until well combined and foamy.
  2. Butter skillet and add egg mixture. Using a spatula, gently move eggs around in skillet to scramble. When eggs are almost cooked through, transfer half of eggs to a bowl and sprinkle with half of cheese. Place remaining eggs on top and sprinkle with remaining cheese. Enjoy!
