Meal Plan Monday: December 9–22

Let the healthier holiday baking begin! These beautiful Coconut Snowball Cookies are so easy to make and are just one of the many delicious recipes featured in this week’s meal plan.

One of my favorite ministries is serving as the Meal Planning Contributor for The Better Mom, where I share my bi-weekly real food meal plans as a way to help inspire and encourage others. Each bi-weekly meal plan includes what’s on the menu for breakfast, lunch and dinner, as well as links to more than 40 of the delicious real food recipes featured.

Why is this called “Meal Plan Monday,” when it’s posted on Saturday?
I thought it would be nice to give you the heads-up about what’s on the menu for the week ahead. Pumpkin Spice Muffins Gift-in-a-Jar

Warning! I get a wee bit excited about making homemade holiday gifts. So brace yourself … For the next week, I will be sharing a few of my favorite homemade holiday gifts-in-a-jar recipes. Each is based on one of the popular recipes shared here, so even if you’re not into making homemade gifts, you just might be tempted to whip-up a batch or two of these scrumptious recipes just for you and your family.

For those of you who share my affinity for making homemade gifts, let me assure you that these tasty Pumpkin Pie Muffins make a delicious and nutritious gift, especially for those living a gluten-free or grain-free lifestyle. Yet even those who are not, will most certainly appreciate these festive nutrient-dense muffins.

Pumpkin Pie Muffins Gift-in-a-Jar (Grain-Free)

Simply layer the ingredients in a wide-mouth one-pint (2 cup) mason jar in the following order:

• 1/4 cup walnut pieces
• 1/3 cup organic raisins
• 1 3/4 cups blanched almond flour
• 1/4 tsp celtic sea salt
• 1/2 tsp baking soda
• 1 tsp pumpkin pie spice
• 1/4 tsp ground ginger

Finishing the gift:
Cut out festive paper in circles the same size as the jar top; place paper on top of the circle seal and then screw the lid over the paper. Add decorative ribbon and a gift tag.

Be sure to download the Pumpkin Pie Muffins Baking instructions (PDF). I like to print the directions out and place them within the Christmas card we give along with the gift jar. To make it extra festive, I place both the card and gift jar in a recycled gift bag.

Cranberry-Orange Christmas Cake (GF, DF)

Cranberry Orange Cake (GF, DF)

Every Christmas for the past 20 years, I’ve baked and shared my special Whole Grain Cranberry Orange Christmas Bread with family and friends.

However, since going grain-free, I was determined to not let this family tradition come to an end. So, I set out to replicate the wonderful flavor and aroma of this holiday favorite by using one of my favorite grain-free ingredients – coconut flour!

If you haven’t baked with it before, my new grain-free Cranberry Orange Christmas Cake recipe is a great place to start – it’s so easy to make. And of course, it’s completely scrumptious!
