Turkey-Veggie Meatloaf (GF Option)

This picture is a bit blown-out – apologies – I’ll retake soon. But trust me when I tell you that this is a delicious meatloaf recipe that kids in particular love. The “hidden” veggies help keep the meatloaf nice and moist and add wonderful flavor!

Time-Saving Tip: This is one of three quick-n-easy ground turkey recipes that you can prepare all at the same time and then freeze them to have ready-to-go meals for busy days. For details, check out “Turkey Times Three (T3).”

Turkey-Veggie Meatloaf (GF Option)

Yield: 5-6 servings

Turkey-Veggie Meatloaf (GF Option)

Ingredients

    Turkey Burger Base Recipe
  • 1 1/4 lb of ground turkey
  • 1/4 cup finely chopped green onion
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped organic zucchini
  • 1/4 tsp Celtic sea salt
  • 1/4 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp fresh-ground pepper
  • Add to the above Base Recipe:
  • 1 large pastured egg
  • 1/4 tsp Italian herb seasoning
  • 1/4 tsp dried parsley (or 1/2 tbsp fresh)
  • 2 tbsp ketchup (or 1 Tbsp tomato paste if doing Whole30)
  • 1/3 cup homemade GF breadcrumbs (or substitute with blanched almond flour if doing Whole30)

Instructions

  1. Preheat oven to 350 degrees. Heat a skillet to medium-high heat and add about one tablespoon of olive oil. Sauté finely chopped onion, carrot, zucchini and garlic until soft (about 3-4 minutes).
  2. Place ground turkey in large mixing bowl and add the veggies to the turkey and allow to cool a minute. Then add all of the remaining ingredients.
  3. Using your hands, combine all ingredients until well incorporated.
  4. Shape into a loaf and place into a well-oiled loaf pan.
  5. Bake uncovered for 25 minutes. Remove from oven and top with the yummy ketchup-maple topping (see note below).
  6. Return to oven and continue baking for another 20-25 minutes, until meatloaf is cooked through. Enjoy!

Notes

Ketchup-Maple Meatloaf Topping: In a small dish, whisk together 3/4 cup ketchup with two tablespoons of pure maple syrup. Spread on top of meatloaf as directed in recipe above.

Turkey-Veggie Burgers (GF)

Don’t be tempted to compromise your health by succumbing to the convenience of fast food. With a little planning ahead (meal planning, that is), you can make your own homemade burgers and freeze them for nights when you’re pressed for time.

And making fast REAL food, is not only substantially healthier, but it’s also more economical too! Personally, we think these burgers are the bomb! If you’re in the mood to go big, serve them up with a side of healthier fries and a big scoop of my secret ingredient guacamole!

Turkey-Veggie Burgers (GF)

Ingredients

  • 1 1/4 lb of ground turkey
  • 1/4 cup finely chopped green onion

  • 1/4 tsp Celtic sea salt
  • 1/4 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp fresh-ground pepper
  • Optional: Homemade Guacamole

Instructions

  1. Heat a skillet to medium-high heat and add about one tablespoon of olive oil. Sauté finely chopped onion, carrot, zucchini and garlic until soft (about 3-4 minutes).
  2. Place ground turkey in large mixing bowl and add seasonings. Add veggies to the turkey and allow to cool a minute.
  3. Using your hands, combine all ingredients until well incorporated.
  4. Form into patties and grill over medium-high heat. (Or you can individually wrap uncooked patties and store in a freezer-safe container in the freezer. Be sure to allow frozen burgers to thaw overnight in frig before grilled.)
  5. Serve burgers with a big scoop of homemade guacamole, if desired.

Time-Saving Tip – Turkey Times Three (T3)

I just love cooking with my boys! It’s amazing the number of ways they contribute to the development of better tasting recipes!

Here are three recipes you can create at the same time that are certain to not only save you time, but also give you and your family some delicious healthy options for three favorite traditional comfort foods! And they freeze great too, so don’t risk turkeying-out your family by serving all three in the same week!

T3 is the result of an “ah ha” moment during a cooking session with my youngest son. We were making our usual turkey-veggie burgers and meatballs together (which I thought was such a brilliant use of time), when he said, “Mom, why don’t you try making a meatloaf out of this stuff?” This kid is a genius!

Thus, T3 was born! Since then, we now happily squish and squash our ground turkey into these three wonderful concoctions and freeze it for those days when we’re craving some good old-fashioned comfort food! Yet another reason why I truly believe getting your kids in the kitchen is such a wonderful blessing!

So here’s how T3 works … it’s as easy as 1, 2, 3!

1)   Simply triple the turkey-veggie burger recipe and once you’ve got it made,

2)   Divide the massive meat-mixture into three relatively-equal portions. One portion will be for your burgers, while the other two portions will be used to make the meatballs and meatloaf.

3)   Just add the remaining ingredients to the two portions dedicated to meatballs and meatloaf, as outlined in the recipes, and you’ve got T3 – three delicious meals ready to go! Now that’s what I call a time saver!
