Meal Plan Monday: August 6–19

One of my favorite ministries is serving as the Meal Planning Contributor for The Better Mom, where I share my bi-weekly real food meal plans as a way to help inspire and encourage others. Each bi-weekly meal plan includes what’s on the menu for breakfast, lunch and dinner, as well as links to more than 40 of the delicious real food recipes featured.

Why is this called “Meal Plan Monday,” when it’s posted on Saturday?
I thought it would be nice to give you the heads-up on what’s on the menu for the week ahead. That way, you have time to take advantage of incorporating some (or all) of the meals featured, if you’d like. Remember: To view the recipe links for each of the meal plans below, please pop on over to The Better Mom.

FEATURED RECIPE: August is National Peach Month and this delectable Grilled Peaches & Cream recipe is a perfect way to showcase the sweet fresh flavor of ripe summer peaches!

Summertime Favorite: Grilled Peaches & Cream (GF)

Fresh, ripe peaches snuggle-up with pure vanilla and ground cinnamon in a cozy
foil-packet to create a fragrant and delicious summertime treat. Simply top with a
scoop of homemade vanilla ice cream. “Oh yeah, now we’re talking!”


Simply drizzle the sweet-syrup mixture over peach halves, placing the majority into the
peach halve-cavities. Then …


Fold foil together to form a packet, crimping edges to seal. Grill, covered, for 10-12 minutes. Enjoy!

Grilled Peaches & Cream (GF)

Yield: 6 servings

Grilled Peaches & Cream (GF)

Ingredients

  • 6 fresh ripe organic peaches
  • 1 tbsp of fresh-squeezed lemon juice
  • 1 tbsp butter, melted (or coconut oil)
  • 2 tbsp coconut sugar (or sucanat)
  • 1 tsp pure vanilla extract
  • 1/8 tsp ground cinnamon
  • Homemade vanilla ice cream (see *notes below)

Instructions

  1. Preheat grill to medium-high (400 degrees). Peel, halve, and pit peaches. (See note below for an easy peach peeling tip.)
  2. In a large bowl, combine lemon juice and melted butter. Add peach halves; toss well to coat.
  3. Next, place the peach halves on a large piece of parchment-lined foil.
  4. In the bowl containing the leftover lemon-butter mixture that the peaches were tossed in, whisk in the rapadura, vanilla extract and cinnamon.
  5. Drizzle mixture over peach halves, placing majority of liquid into the peach halve-cavities.
  6. Take another large sheet of foil and cover the peaches. Fold foil together to form a packet, crimping edges to seal. Grill, covered, for 10-12 minutes.
  7. Remove from grill and allow foil packet to rest undisturbed for about 5-10 minutes. Then, carefully open packet.
  8. Slice each peach halve into quarters and divide among six bowls.
  9. Top with scoops of homemade vanilla ice cream and drizzle with the grilled peach juices. So yummy!

Notes

A quick and easy way to peel peaches ... bring a stockpot of water to a rolling boil. Add whole peaches and cook for one minute. Remove peaches from boiling water, using tongs, and place in a cold water bath. Once cooled to touch, peel off skins.

Peach Mango Salsa (GF)

August is NATIONAL PEACH MONTH!! So what better way to celebrate than with a parade of peachy recipes all month long! So let’s start this peachy parade with one of my family’s favorites … Peach Mango Salsa!

Fresh ripe peaches and mango combine with jalapeno and basil to create this amazingly sweet-n-spicy condiment perfect for serving with grilled fish or chicken. Or simply enjoy it as a snack with homemade tortilla chips.

Easy & Delicious Dinner Idea: Simple grilled fish becomes an absolute treat when topped with this delightful peach-mango salsa. See recipe below for details.

Yield: 4-5 servings

Peach Mango Salsa (GF)

Ingredients

  • 3 fresh, ripe organic peaches, *peeled and diced
  • 1 cup seeded and diced organic plum tomatoes
  • 1/2 cup diced mango
  • 1/4 cup finely chopped red onion
  • 1 tsp finely minced jalapeno (use more if you like your salsa hotter)
  • 1 tbsp finely chopped fresh organic basil
  • 2 tbsp fresh-squeezed lime juice
  • Sea salt & fresh ground pepper to taste

Instructions

  1. In a medium bowl, combine all ingredients.
  2. Season to taste with salt and pepper.
  3. Serve with tortilla chips, or on top of grilled fish or chicken.

Notes

*A quick and easy way to peel peaches ... bring a stockpot of water to a rolling boil. Add whole peaches and cook for one minute. Remove peaches from boiling water, using tongs, and place in a cold water bath. Once cooled to touch, peel off skins.

Grilled Fish w/Peach-Mango Salsa: Preheat grill on medium-high. Using a clean dish cloth or paper towels, pat dry fish fillets, then place on a sheet of foil. Brush each fillet lightly on both sides with a touch of olive oil and sprinkle with sea salt and fresh ground pepper. Place foil with fish direct on grill and cover grill. Cook about 5-8 minutes (depending on thickness of fillets) until fish is opaque. Remove from grill and serve immediately with a heaping dollop of peach-mango salsa.
