One-skillet meals make life so much simpler! And that’s definitely a plus, whether you’re doing Whole30 or not!

For some reason, I’ve been craving Asian-style food this month. It started with constantly daydreaming about my favorite let’s-go-out-for-dinner, Chicken Pho Bowls (which are now my favorite let’s-stay-in-for-dinner).

Then this weekend, I started thinking about Thai lettuce Wraps and got all silly-excited about creating a quick-n-easy version featuring delicious Whole30-friendly ingredients.

This simple one-skillet meal is definitely a flavorful spin of traditional Asian style wraps. Whole30-friendly, this tasty dish will satisfy your cravings!

Variety is the spice of life! … Especially during the later phase of Whole30, when it’s not uncommon to experience serious food boredom. Yet, there’s an easy way to get past this little hurdle – simply spice up your life with something new (or enjoy a new spin on an old favorite).

This simple one-skillet meal is definitely a flavorful new spin! Traditional Asian style wraps call for hoisin sauce, and although you can find gluten-free hoisin, it’s still a big no-no on Whole30 since it’s loaded with non-compliant ingredients. But not to worry, this recipe captures the sweet-n-spicy flavors beautifully!

This simple one-skillet meal is definitely a flavorful spin of traditional Asian style wraps. Whole30-friendly, this tasty dish will satisfy your cravings!

I’ve also gone off the beaten path by using ground turkey, as most Asian style wraps are made with ground chicken. Personally, I prefer ground dark meat turkey, because I find it to be more flavorful and it’s usually easier to find.

If you have the luxury of leftovers, or simply want another delicious way to enjoy this tasty dish, I highly recommend creating a spectacular Asian Style Salad.

Start with a bed of butter lettuce. Then, pile a big mound of this sweet-n-spicy meat on top. Next, toss in some cashew pieces and fresh mandarin or clementine orange slices (if using canned mandarins, be sure to read labels to avoid unwanted additives).

Finish with a squeeze of lime and a dash of toasted sesame seeds. Amazing!!  (See recipe note below.) Enjoy!

Asian Style Wraps {Whole30}

Yield: 4-5 servings

Ingredients

    For the sauce
  • 1/4 cup coconut aminos
  • 3 Tbsp tomato paste
  • 2 Tbsp toasted sesame oil
  • 2 Tbsp rice vinegar (yes, it's Whole30-compliant)
  • 2 Tbsp minced fresh garlic
  • 1 Tbsp grated fresh ginger (use a microplane grater)
  • 1/2 tsp sea salt
  • 1/4 tsp red pepper flakes
  • For the meat
  • 2 lbs ground dark meat turkey (or chicken)
  • 1/2 cup fine diced sweet onion
  • 1 tsp sea salt
  • 1 Tbsp arrowroot (optional, to thicken sauce)
  • Accompaniments
  • Bibb or Butter Leaf lettuce
  • Shredded carrot
  • Sliced green onions
  • Diced red pepper
  • Cashew pieces

Instructions

  1. For the sauce: In a small bowl, whisk together the sauce ingredients. Set aside.
  2. For the meat: In a large skillet over medium-high heat, add 2 tablespoons of olive oil and the diced onion. Sauté 1-2 minutes until onion softens, then add the ground turkey (or chicken). Season with sea salt.
  3. Sauté ground meat until cooked through (about 3-4 minutes). For perfectly crumbled meat, a potato masher to stir and mash the meat.
  4. Reduce heat to medium. Add the sauce and arrowroot to the meat, stirring until well combined. Continue cooking and stirring the meat mixture until the sauce thickens (about 1-2 minutes).
  5. To serve: Spoon the tasty meat mixture onto soft lettuce leaves and garnish with your favorite accompaniments. So delicious!

Notes

As we all know, one of the biggest challenges to maintaining a healthy whole food lifestyle is time! That’s why I’m excited to launch this helpful series featuring one of the easiest “Cook Once, Eat Twice or More!” strategies for saving time in the kitchen – batch cooking!

Batch cooking is simply making a large quantity of a particular food and using it to make multiple meals. This week, we’re putting this awesome time-saving strategy to work with my favorite Slow Cooker Roast Chicken.

When it comes to slow cooking a whole chicken, I’m all about getting the biggest bird I can afford (and will fit in my slow cooker). Cooking a big bird means lots of meat for making quick-n-easy weeknight dinners like the ones featured below.

Of course, this easy Rotisserie-Style Slow Cooker Chicken makes a delicious dinner paired with a bed of garlic-infused root veggies. However, I frequently slow cook a whole chicken on the weekend for the sole purpose of saving the meat for future meals, since a 6-pound whole chicken yields about 7-8 cups of shredded meat! Plus, it’s so easy to toss the bones back into the slow cooker to make a nutritious bone broth perfect for soups, stews and more!

Savory cottage pie is a simple and frugal, yet flavorful and hearty comfort food that fills the belly, while warming the heart. There's even a Whole30 option!

For centuries, savory cottage pie and shepherd’s pie have been enjoyed as simple and frugal, yet flavorful and hearty comfort food that fills the belly, while warming the heart.

Not to be a culinary nerd, but technically speaking, there is a difference between “cottage pie” and “shepherd’s pie” … it’s all about the meat … Shepherd’s pie is made with lamb, whereas cottage pie is made with beef.

Savory cottage pie is a simple and frugal, yet flavorful and hearty comfort food that fills the belly, while warming the heart. There's even a Whole30 option!

Of course, I have no idea what to call it if you opt to make cottage pie with ground turkey instead? (Which just so happens to be a personal favorite around here.) Technicalities aside, this is definitely a savory, hearty dish that comes together easily (especially if you have leftover mashed potatoes or sweet potatoes on hand).

This one bowl meal makes it easy to enjoy while sitting cross-legged on the floor next to the fireplace. Sometimes it’s nice to take a break from dinner at the table and instead enjoy a rustic meal gathered around a crackling fire on a cold winter’s night!

Savory Cottage Pie (GF, DF & Whole30 options)

Yield: 6 servings

Ingredients

  • 1 tbsp olive oil
  • 1 cup sliced fresh carrots
  • 2/3 cup finely chopped sweet onion
  • 1 garlic clove, minced
  • 1.25 lbs ground grassfed beef (or ground turkey)
  • 1 tsp sea salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp dried thyme
  • 2 Tbsp ketchup (for Whole30, use 1 Tbsp tomato paste)
  • 1 cup frozen green beans
  • 1/2 cup frozen peas (omit for Whole30)
  • 1 (15oz) can diced tomatoes (fire-roasted is best)
  • 5 cups mashed potatoes or sweet potatoes (seasoned w/salt & pepper to taste)
  • Optional: 1 cup shredded grassfed cheddar cheese (omit for Whole30)

Instructions

  1. Preheat oven to 375°F. Heat a large skillet over medium-high heat. Add oil and sauté carrots, onion and garlic until onion begins to soften (about 2-3 minutes).
  2. Add ground beef (or turkey), breaking up meat with a wooden spoon; cook until no longer pink, about 4-5 minutes.
  3. Next, add salt, pepper, thyme and ketchup (or tomato paste). Then, add frozen veggies and diced tomatoes; stir until well combined.
  4. Reduce heat to medium, cover pan and allow to cook about 5 minutes until vegetables soften.
  5. Spoon mixture into a 9x12-inch baking dish. Sprinkle with shredded cheddar, if desired. Spoon mashed potatoes (or mashed sweet potatoes) over top and use an offset spatula to spread potatoes evenly across the meat mixture.
  6. Bake approximately 30-35 minutes until potatoes are lightly browned and mixture is bubbly. Allow casserole to rest 5 minutes before serving. Enjoy!
