Like most families, we have our share of picky eaters. I’m sure you know what I mean, and if you don’t, count yourself blessed. Despite my best efforts, somewhere around the age of 8 or 9 years old, my boys adopted the philosophy that “if it’s green, it’s yucky!” Boo to that, so I’ve been on a mission to counter it with … “greens are great!”

Since the theme this month over at Keeper of the Home is how to prepare and enjoy healthy seasonal produce, I thought it only fitting to share my affinity for Swiss Chard – not only because its mild flavor makes it the perfect green to introduce to those picky eaters in your family, but also because it’s a powerhouse of nutrition.

So I invite you to join me to learn more about the many health benefits of Swiss chard, as well how to properly select, store and prepare it – and of course, be sure to grab the recipe for my deliciously easy, one-skillet Swiss Chard & Shrimp Sauté, which features another veggie favorite around here – zoodles!

Mango Chicken Wrap from Happy Mom, Healthy Family

Finding simple healthy meals that the whole family can enjoy makes it so much easier for moms to get a nourishing meal on the table without a lot of time or stress. That’s why, I so appreciate Lisa Byrne’s fabulous “Happy Mom, Healthy Family Cookbook.” (aff.link)

I can see why she calls it the happy mom cookbook, as it contains 80+ easy nutritious recipes, plus a free online meal planning course. Wow! Thankfully, Lisa was more than gracious to allow me to share one of the delicious recipes from her wonderful eBook – these Mango Chicken Lettuce Wraps (see recipe below).

These simple wraps are not only delicious, but they’re also a great way to repurpose leftover roasted chicken meat for a super quick and easy meal.

And for those macho-men in your home, you can easily substitute the lettuce wrap for a more filling (and manly, so I’m told) GF tortilla. Either way, this recipe’s a keeper!

Mango Chicken Lettuce Wraps(GF)

Yield: 4 servings

Ingredients

  • 2 cups precooked, shredded roasted chicken
  • 1 large ripe mango, cut into 1/2” chunks
  • 1/3 cup carrots cut into matchsticks
  • 1/3 cup red pepper, thinly sliced
  • 1/4 cup green onions, sliced
  • 2 tbsp fresh-squeezed lime juice (1 large lime)
  • 2 tbsp olive oil
  • 1/2 tsp Dijon mustard
  • 1/2 tsp honey (omit for Whole30)
  • Sea salt & pepper to taste
  • Bibb or romaine lettuce leaves (or GF tortillas, if preferred)
  • Optional: 1/4 cup cashews, chopped

Instructions

  1. Clean and pat dry the lettuce leaves. (You'll need 2-3 large leaves per person.)
  2. Place the chicken, mangos, carrot sticks, red pepper and green onions in a large mixing bowl. Stir together to combine.
  3. In a separate bowl, whisk together the lime juice, olive oil, mustard and honey, if using.
  4. Add the olive oil mixture to the chicken mixture and stir until well combined. (Taste and add salt and pepper, if desired.)
  5. To assemble the wraps, add a couple of heaping spoonfuls of the chicken mixture to each lettuce leaf, or to each tortilla. Top with a sprinkling of cashews, if desired. Serve with a side of herbed cauliflower rice. Enjoy!

Notes

I like to make double the vinaigrette, so I can serve some on the side for my family to drizzle on the top of the wraps/tortillas as well. Yum!

Stir Fry Veggie Zoodles {Recipe Makeover Whole30 Style}

The final segment in our Oodles of Zoodles Spiralizer Series has arrived … And I’ve been saving the best for last!

Well, I guess that’s certainly subjective? But seriously, what could be better than a delicious Veggie Stir Fry with tons of harmonious flavors tossed together with zoodles for an extra touch of texture that makes you feel just like your slurping soba noodles. Yum!

Of course, the men in the house prefer it when I add some leftover grilled herb chicken (or grilled steak) to the mix. And I have to be honest, I like the extra flavor and protein kick that comes with tossing in some leftover chicken or beef too, especially when I’m taking The Whole30 Challenge!

Like so many of the zoodle recipes I’ve shared, this one’s equally good as leftovers. In fact, I’ll tell you a little secret … my favorite way to enjoy the leftovers is to barely warm them for breakfast and add a poached egg on top. Oh my, it’s good!

Stir Fry Veggie Zoodles (Whole30)

Yield: 4 servings

Ingredients

  • 4 large organic zucchini
  • 2 tbsp sesame oil (or olive oil)
  • 5 green onions, diced (include whites and some green parts)
  • 2 cloves garlic, finely minced
  • 2 carrots, peeled and cut into matchsticks
  • 6 oz. organic snap peas
  • 2-3 small heads of bok choy (chop and divide stem from leaves)
  • 2 cups organic broccoli florets
  • 1 red pepper, sliced in strips
  • 1 cup sliced mushrooms
  • 1/2 tsp fresh grated ginger (or 1/8 tsp ground ginger)
  • Coconut aminos (or organic soy sauce)
  • Optional: Leftover grilled balsamic-lime steak or grilled herb chicken (see note below)

Instructions

  1. Using a spiralizer with the small-hole blade attachment, make zucchini noodles; set aside. For step-by-step instructions on how to make zoodles, be sure to check out my How to Spiralize in 3 Easy Steps Photo Tutorial.)
  2. Next cut and slice remaining veggies as noted in ingredients above, making sure to keep the ingredients separate from one another.
  3. Once all of your veggies are ready, heat a wok or large sauté pan over medium-high heat.
  4. Add oil, diced green onions and garlic. Cook until garlic becomes fragrant, about one minute.
  5. Then, add carrots, snap peas and bok choy stems only. Sauté about 2 minutes (stirring constantly) and then cover for about 2 minutes until veggies begin to slightly soften.
  6. Next, add the bok choy leaves, broccoli, red pepper and mushrooms. Sauté uncovered, stirring constantly, until broccoli begins to slightly soften (about 2-3 minutes).
  7. Then add the zucchini noodles and 1-2 tablespoons of soy sauce (or soy-free coconut aminos). Cover the pan to allow the zucchini noodles to steam cook until they reach desired consistency. (We prefer ours al dente, so 2 minutes is generally all it takes.)
  8. Remove cover, season with ginger, and salt and pepper to taste; tossing well to combine. Enjoy!

Notes

You can easily customize this recipe using your favorite veggies. In addition, you can also toss in leftover grilled balsamic-lime steak or grilled herb chicken to create an even heartier and satisfying main dish. Enjoy!

Time-Saving TIp: You can spiralize the zucchini noodles up to 3-4 days in advance. Simply store in an airtight container with a paper towel to absorb excess moisture. Same goes for the other veggies in this dish. That way, you're all ready to go to make a quick and healthy meal!
