5 Tips to Make Lunch Packing Easier!

If you’re already breaking out in a cold sweat just thinking about back-to-school lunch packing, boy-oh-boy, do I have a treat for you! My sweet friend Laura over at MOMables is here to share her top five tips for making lunch packing a simpler process.

Laura is an expert on all things lunch and spends much time in teaching busy parents how to make wholesome school lunches in 10 minutes or less. So whether you’re packing a lunch for 1 or 10, I know you’ll appreciate her time-saving tips and inspiring ideas below!

5 Tips to Simplify Lunch Packing

Back-to-school season is upon us and that means getting organized as families, so we can meet the challenges of homework, after school activities, club meetings, household duties, cooking meals, and of course … school lunches.

If the thought of getting it all done overwhelms you, don’t worry; you are not alone.  Many of us struggle with this time of the year because it means that the fun and free-for-all-summer is over and our early morning devotional time is now shared with making sure our children are clothed, fed and ready for school.

Every parent I know, wants to pack a wholesome school lunch for their kids, but packing them daily can be a challenge. Many get started making wholesome lunches every day, but then run out of steam and ideas after a few weeks.  The good news is packing a wholesome lunch doesn’t have to be difficult. Fresh is always best… and it can also be easy! All it takes is a little preparation and know-how to get a smooth routine in place.

Here are five of my favorite tips to simplify the lunch packing process:

  1. Plan ahead. Putting together a full family meal plan, even for lunches, ahead of time is the ultimate time saver. It’s much easier to pull out the ingredients and assemble a quick lunch, when you already know what to make! Repurposing dinner leftovers into something delicious for lunch is simple when you have a plan. No one likes to stand in front of the fridge with that deer-in-headlights feeling daily. Making the most of leftovers is easy when you know what you’ll need for the week. Having pasta for dinner on Monday night? Boil extra noodles and plan for a pasta lunch on Wednesday. It’s really that easy!
  2. Keep it simple. When I develop our menus for MOMables, my goal is to provide nutritious lunches that take 10 minutes or less to assemble. Don’t have time to make intricate butterfly-shaped quesadillas? Me either. Opt for minimal fresh ingredients, few steps, easy assembly and forget the rest. Many lunch cookbooks and bento websites have great ideas, but the intricate shapes and numerous ingredients can be discouraging. Use a simple sandwich cutter, if you want to get fancy, but leave out anything that requires special gadgets, elaborate ingredients, processed foods and lengthy recipes.
    P.S.  I’m often asked how to beat the lunch-rut, when it seems like your kiddo only eats one or two things. (Their staple foods, if you will.) Here’s a MOMables tip: Write a list of the things they do eat. Then, incorporate those items in different ways (with some other healthy ingredients), until little by little you are adding one new thing at a time.)
  3. Have the right gear. By packing lunches in reusable, divided containers everything has its own place, which makes it easy to see what items your lunch may be lacking. If you get into the routine of packing your fruits and vegetables in the smaller sections, you can more easily see what may be lacking to provide a complete meal. Re-usable containers are also better for the environment than the waste created by disposable baggies. One re-usable container can replace the need for 4-6 disposable baggies each day! A small thermos is also a great tool to have on hand.  You can pack leftover soups, pasta and warm dishes without needing to reheat.  A quality thermos gives you more options and the ability to “think outside the sandwich.”
  4. Prep ahead. Slicing and dicing fresh vegetables can seem time consuming when you’re trying to hurry and pack lunches during late nights or rushed mornings. A great time to prep them is when you get home from the market – simply take a few minutes to clean and cut what you’ll need for the week ahead. This way, you’ll have servings of fruit and veggies ready to grab-n-go when lunch packing. This will also save you money, because buying those items pre-cut can be expensive. You’re also less likely to find that “mystery fruit” stinking up the back of your refrigerator that never got used and now have to throw away. Remember: A few minutes of your time = savings in your pocket book.
  5. Pack a few days at a time. Sounds crazy, but it’s actually very easy.  I take one hour on Sunday nights to boil pasta, cook rice or make anything that is not part of my dinner meal plan for the week ahead. I use these to repurpose dinner leftovers for lunch. I pack Monday, Tuesday and Wednesday in containers and label or color code the box to its owner.  We have thermos Thursday and pizza or leftover Fridays. This makes packing a wholesome lunch simple, efficient and time saving.

Avocado Egg Salad (GF)


I know it may sound a bit odd, but ripe avocados and boiled eggs combine scrumptiously to create a creamy cultured egg salad that’s just as healthy as it is delicious!

If you’ve tried my other favorite ‘kooky’ sandwich filling – Carrot & Cheddar – then you know that sometimes two seemingly odd-paired foods can create quite a taste sensation!

So it is with this recipe … by folding diced avocado into egg salad, you get a wonderful creamy texture and lots of added beneficial nutrients, phytochemicals and antioxidants.

And just incase you think I’m the only crazy one out there who puts avocado in egg salad, do a quick google search. I was pleasantly surprised to see how many foodies out there enjoy this creamy concoction! Hmm … Maybe it isn’t so odd after all?

By using a food processor, you can get fine, evenly diced eggs for a creamier texture. However, if you have a rotary-style cheese grater, this handy gadget also works well to finely dice boiled eggs.

I prefer to add diced avocado to already prepared egg salad in order to enjoy a nice chunk of creamy avocado in each bite. An easy way to dice an avocado is to simply use a knife to cut it into sections as shown above. Then, use a spoon to remove the avocado chunks by first sliding it right down the center of the avocado half, and then repeat running the spoon along the inside of the skin to remove the remaining avocado pieces.

How to hard boil eggs like a pro … Place eggs in a sauce pan and add just enough water to just cover the tops of the eggs. Bring water to a rolling boil, then immediately cover the pan and turn off the heat. Allow the eggs to sit undisturbed for 8-9 minutes. Then, drain off the hot water and place the eggs in a cold water bath for a few minutes before peeling. Peeled eggs can be kept in an airtight container in the refrigerator for up to three days. (Eggs left in their shells can be stored for 6-7 days.)

Avocado Egg Salad (GF)

Yield: 2-3 servings

Avocado Egg Salad (GF)

Ingredients

  • 4 hard boiled eggs, cold (pastured are best)
  • 2 tbsp plain organic whole milk yogurt (if you're DF, see note below)
  • 2 tbsp mayo (cultured is best)
  • 1/2 tsp stoneground mustard
  • 1/2 tsp fresh, finely minced dill (or 1/4 tsp dried dill)
  • 1/4 tsp fresh-squeezed lemon juice
  • 1/8 tsp garlic powder
  • 1/4 to 1/2 tsp sea salt (to taste)
  • Dash of freshly ground black pepper
  • Half of a stalk organic celery, finely diced
  • 1 ripe avocado, diced

Instructions

  1. Cut the eggs in half and place in the bowl of a food processor. Pulse until finely diced. (If you have a rotary-style cheese grater, this handy gadget also works well to finely dice boiled eggs.)
  2. In a medium bowl, whisk together the yogurt, mayo, mustard, lemon juice and seasonings.
  3. Add the diced egg to the creamy yogurt-mayo mixture and combine well.
  4. Then, fold in the diced avocado and finely diced celery.
  5. Serve on a bed of fresh organic mesclun greens, or on your favorite wholesome bread.

Notes

Time-Saving Tip: You can make the egg salad up to two days ahead of time. Just wait to fold in the diced avocado until just before serving in order to avoid the browning effect.

*If you're dairy-free, simply use all mayo for this recipe instead of yogurt.

Wraps (a.k.a. Roll-Ups) are a tasty, fun and attractive alternative to the traditional sandwich. And they’re also a fun and frugal way to repurpose dinner leftovers!

We love “the wrap” – they make a great lunch/lunchbox option and a delicious, nutritious snack. In fact, my kids have eaten foods they normally turn down, when I roll it up in a tortilla wrap! Apparently, the cute little roll-up makes everything look and taste yummier!

Below are a few of our favorite healthy wrap recipes, as well as a lot more ideas for real food wrapping … Enjoy!

A healthy wrap begins with a nutritious tortilla … 
Below are a few options for making your own homemade tortillas:
Homemade Soaked Tortillas
• Grain-Free Tortillas: (I haven’t tried these yet, but they look yummy!)
  –Almond Flour Tortillas
  –Egg-Free & GF Tortillas

Wrapping tips …
• A warm tortilla is generally easier to roll-up than a cold one, and is less likely to break or tear. So once you’ve got the ingredients ready for your wrap, heat a skillet over medium heat and slightly warm the tortilla on both sides. Then add your wrap ingredients and roll, following additional tips below.
• To help “seal” the tortilla, include some form of spread as a base layer (like mayo, cream cheese, nut butter, etc.). Then add your wrap ingredients making sure to leave about one inch of one side of your tortilla free of heavy ingredients. Start rolling on the side with ingredients, so you end the roll-up on the side with spread-only in order to help seal it.
• Once you’ve finished rolling-up your wrap, gently squeeze it with cupped hands, like a sushi chef does with a sushi roll.

• BLAT: Spread tortilla with mayo and add bacon, lettuce, avocado and tomato
• Philly Cheese Steak: Spread tortilla with mayo or spicy mustard and add thinly sliced
steak, sautéed onion and raw Swiss cheese
• Crunchy Veggie: Spread tortilla with mayo or cream cheese and add your favorite raw
veggies like shredded carrot, zucchini, spinach, broccoli, cucumber, etc.
• Taco Salad: Spread tortilla with refried beans and/or guacamole; then add chopped lettuce, grated raw cheese and seasoned meat.
• Grilled Chicken Salad
• Egg Salad, Tuna Salad or Salmon Salad

Greek Salad Wrap

Ingredients

  • 1/2 cup diced grilled chicken
  • 1 large organic romaine lettuce leaf, chopped
  • 5-6 kalamata olives, chopped
  • 3 tbsp crumbled feta cheese
  • 2 tbsp diced organic tomato
  • 2 tbsp diced organic cucumber
  • Homemade Italian dressing
  • 1 whole grain or GF tortilla

Instructions

  1. In a small bowl, combine all ingredients and add a drizzle of homemade Italian dressing, if desired.
  2. Spread a thin layer of mayo evenly across tortilla.
  3. Add Greek salad ingredients and roll up. (Definitely one of my favorite lunch wraps!)
