These Savory Chicken & Veggie Bites are crazy-delicious and super versatile. They make a delicious option for dinner, lunch, breakfast, snacks and more!

For many of us, getting more veggies on our families plates can be a bit of a challenge. If you can relate, then let me assure you, these savory little bite-sized chicken & veggie bites are just the ticket!

These simple and flavorful little bites are crazy-delicious and super versatile too, since they can be used to create so many easy, healthy meals, as noted below! And, you can switch up the ingredients to create lots of different variations!

P.S. They’re equally tasty whether they’re served hot or cold, making them a tasty and healthy lunchbox option for back-to-school season. And, they freeze and reheat well, which means you can save time by cooking up a double batch and freezing them for creating quick future meals.

Here’s just a few of my favorite ideas for enjoying these Savory Chicken & Veggie Bites:
• Pop them into your family’s lunch boxes with a side of homemade ranch dressing and fresh raw veggies for a perfect protein-n-veggie-packed lunch!
• Add them to your favorite stir fry dishes, and zoodle (veggie pasta) dishes
• Serve them as a main dish with a side of tasty roasted herb sweet potato bites for an easy weeknight dinner
• Use them to make scrumptious healthy sliders (nestled between sweet potato buns), or use them to create tasty lettuce wraps (as shown in photos)
• Add them to your favorite salads for extra protein, nutrition and flavor!

As you can see, there are so many ways to enjoy these tasty little patties! And again, you can totally customize them to suit your personal taste preferences. Simply switch out the veggies and the seasonings for a completely new taste sensation! (Check out some of my favorite recipe variations below.) Enjoy!

Savory Chicken & Veggie Bites (Whole30, GF, DF)

Ingredients

  • 1 cup fresh baby spinach leaves
  • 1 medium zucchini, sliced
  • 1/2 medium red bell pepper, sliced
  • 3 green onions, sliced
  • 1/4 cup fresh basil leaves
  • 1 1/4 lbs. ground dark meat chicken (or turkey)
  • 1 clove garlic, minced
  • 1 large egg
  • 1 tsp Italian seasoning mix
  • 1 tsp sea salt
  • 1/4 tsp cayenne pepper

Instructions

  1. Place the first 5 ingredients (baby spinach, zucchini, bell pepper, green onion and basil) into the bowl of a food processor. Pulse until fine diced, scraping down the bowl as needed to ensure uniform size.
  2. Add the ground chicken and remaining ingredients. Pulse briefly, just until ingredients are combined. Remove blade from the bowl. Form meat into small (2-3 inch) patties.
  3. Preheat a large skillet over medium heat. Add a tablespoon of avocado oil (or oil of your choice) to hot skillet. Place chicken patties about 2" apart. Working in batches, cook patties about 3-4 minutes per side, until golden brown and cooked through. Transfer to a paper towel lined plate.
  4. Serve immediately, or allow patties to cool and store in fridge for up to 4 days. To freeze, place patties on a parchment-lined baking sheet and place in freezer. Once frozen solid, transfer patties to a freezer safe container for up to 1 month. To reheat, place thawed patties in a 250°F oven for about 5 minutes.
  5. Time-Saving Tip: Make a double or triple batch and freeze them for making quick and easy future meals. (See quick meal ideas in post above.)

Notes

Tasty Recipe Variations

By changing out the seasonings, you can create Chicken & Veggie Bites to suit your own personal taste preferences. For example:

• Mexi-Style Bites – use Mexican seasoning (or taco seasoning) in place of the Italian seasoning mix, and substitute cilantro in place of the basil.

• Curry Bites – use 1/2 teaspoon of curry powder in place of the Italian seasoning mix and substitute cilantro in place of the basil. You may also wish to add 1 1/4 teaspoon of garam masala seasoning as well.

• Asian-Style Bites – use Chinese five-spice seasoning in place of the Italian seasoning mix and substitute cilantro in place of the basil. Fry patties in a combination of olive oil and toasted sesame oil.

Southwestern Chicken Burgers

In search of a burger boredom buster?

Break up the burger boredom with these Southwestern Chicken Burgers! And you'll love the toppings as much as you'll love the burgers!

Me too! Mainly because I live in a house of manly men – yes, even the pets are males – and they all love burgers! And of course, let’s not forget the fries.

In fact, if it were up to these guys, it would be burgers and fries every week. (Dare I say multiple times a week?)

Of course I want to keep them happy, and well fed, but I also have to be honest here – plain ole burgers bore me. Hopefully, the die-hard burger lovers out there will forgive me. I don’t mean to be a burger hater. It’s not that I don’t want to like burgers, it’s just that unless they’re packed full of savory seasonings, or come loaded with mounds of flavorful toppings, I’d rather pass.

Enter the burger boredom buster idea … Since The Whole30 Challenge requires a palm-sized serving of meat at each meal, I thought “what’s more palm-sized than a burger?” And since burgers make my guys happy  – which means one less meal to play short-order cook – I was inspired to create a burger that would please anyone who enjoys a well seasoned patty! (And I strategically included a few hidden veggies to add extra flavor and nutrition too!)

As tasty as these burgers are, I still say, bring on the toppings! My favorites? Sliced tomatoes, red onion, avocado and spicy mayo. Confession time … if I wasn’t on the Whole30 right now, you can bet I’d be tossing these babies onto a slightly toasted grain-free bun too! (In fact, my grain-free hamburger bun recipe is one of more than 100 grain-free baking recipes featured in my awesome grain-free baking cookbook! But for now, we’ll be happy with big leafy lettuce-wrapped burgers, after all, they’re yummy too!)

But I digress … the point is, these easy-to-make burgers are so tasty, even this borderline burger-phobe likes them. Especially when they’re paired with Roasted Herb Sweet Potato Bites – they’re so incredibly savory, I’m pretty certain that even your fry-loving family members will find them simply irresistible too.

Now it’s time to fire-up the grill and toss a few flavorful burgers on!

Southwestern Chicken Burgers

Yield: 4 burgers

Ingredients

  • 1.25 lbs ground chicken (preferably dark meat or a mix of white and dark)
  • 1/2 cup fine diced mushrooms
  • 1/4 cup fine diced yellow onion
  • 1/4 cup fine diced red bell pepper
  • 2 tbsp minced fresh cilantro
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Preheat grill to medium-high heat. In a large bowl, add all of the ingredients. Use your hands (or a large fork) to mix together the ingredients until well combined.
  2. Shape into 4 patties. Place on hot grill and cook about 3 minutes per side, until cooked through.
  3. Serve with your favorite toppings such as sliced tomatoes, red onion, avocado and spicy mayo (see note below). And of course, don't forget about those awesome little Roasted Sweet Potato Bites. You'll definitely want those on your plate too!

Notes

To make spicy mayo, start with 1/2 cup of your favorite homemade mayo or Whole30-compliant brand. Add 1/2 to 3/4 teaspoon of hot sauce, 1/4 teaspoon garlic powder and 1/8 tsp sea salt. Whisk together and refrigerate until ready to serve. Yum!

Slow Cooker Asian Style Chicken Wraps

Slow Cooker Asian-Style Chicken Wraps

I am so excited to be here today sharing a simple, and healthy, chicken recipe. So, thank you, Kelly, for having me over!

In keeping with this month’s slow cooker series, I’m sharing one of my family’s personal favorites! This Asian-style Chicken Wraps recipe is super simple. (Since I have a 5, 3, and 1 year old, easy meals are my friend!) So this recipe takes just five minutes to assemble for cooking in the slow cooker. Then, right before serving it, you’re looking at about another 10 minutes to prep the sauce and shred the chicken.

I use boneless skinless chicken thighs in this dish vs. the more common chicken breast for several reasons. The two main reasons are – it keeps the dish moist and it shreds quicker.

An easy tip for shredding chicken … Simply squeeze the cooked chicken thighs with tongs and it breaks into perfect shreds. This method takes just a few seconds to do the entire batch. (No battles with two forks and dry chicken breasts.)

It’s important to note that the seasoned chicken by itself is not the most flavorful. The reason I kept the seasoning simple is because sometimes chicken thighs release a lot of juices, and therefore, most of my attempts at flavoring the chicken ended up in the liquids rather than on the chicken.

So be sure to not skimp on the sauce! That’s where the delicious savory-sweet flavor comes in. With coconut aminos (a soy sauce substitute), toasted sesame seed oil, spices, ginger, garlic, and maple syrup – this flavorful sauce really is what makes the dish come alive!

Asian-style Chicken Wraps

Layering everything in a boston lettuce cup makes for a tasty texture, and healthy dish. I do recommend serving with an Asian-themed vegetable dish (such as this Sesame Broccoli Salad) to up the vegetable content as well as the bulk of the meal.

Slow Cooker Asian-Style Chicken Lettuce Wraps (GF)

Yield: Serves 4 (4 lettuce cups per person)

Ingredients

    For the Chicken:
  • 1 1/2 lb boneless/skinless chicken thighs
  • 1/2 teaspoon 5-spice seasoning
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • For the Sauce:
  • Zest of two oranges (save the oranges for serving)
  • 1/4 cup coconut aminos (I use this instead of soy sauce)
  • 1/3 cup maple syrup
  • 3 tablespoon rice vinegar
  • 1/2 teaspoon toasted sesame oil
  • 1/8 teaspoon + a pinch real salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon 5-spice seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon starch (arrowroot or tapioca) mixed with 2 teaspoons water
  • For Serving:
  • 16 leaves of Boston lettuce (from about two heads)
  • 1 red bell pepper, chopped
  • Orange wedges (use the oranges zested for the sauce)
  • Optional: Sesame seeds, chopped chives and cilantro

Instructions

    For the Chicken:
  1. Mix the seasonings together. Sprinkle on the chicken. Put in the slow cooker. Cook on high for 4 hours.
  2. If there is a lot of liquid in the slow cooker when the chicken is done, remove the chicken to a bowl and shred (discard juices, or save the juices for another use). If there is just a little juice, shred right in the slow cooker. The easiest way I've found to shred chicken is to squeeze it using kitchen tongs.
  3. Making the Sauce:
  4. In a medium bowl, mix together the orange zest, coconut aminos, maple syrup, rice vinegar, sesame oil, starch and salt. Set aside.
  5. In a small skillet, add the garlic powder, ginger powder, five spice seasoning and red pepper flakes. Turn heat to medium. Stir and toast until the spices increase in fragrance and smell toasted (approx. 3 minutes).
  6. Add the orange-maple liquid mixture. Turn the heat up to high and bring to a gentle boil. Boil the sauce for 3 minutes, occasionally stirring. Turn off the heat.
  7. Add the starch-water mixture and whisk well. Remove sauce from heat.
  8. For Serving:
  9. Put a small amount of chicken in the lettuce cup, pour sauce on, and then top red pepper, other desired toppings, and a little squeeze of orange juice.
