Grain-Free Classic Brown Bread
This slightly sweet grain-free brown bread with it’s deep rich molasses and rye undertones is a welcomed addition to any table. Truth be told … I was literally jumping for joy when this recipe finally came together – yes, it’s that good!

As I slathered on the butter, I felt complete abandon as I savored every bite of this classic brown bread. And it really does have a remarkable likeness both in taste and texture to true bread. It’s so light and airy with an ever-so-slight crunchy crust. And the best part, the recipe is perfect for making irresistible grain-free dinner rolls! Yes!

Do I sound like someone smitten? That’s because I am! And you will be too. Promise!

SECRET RECIPE: I’m letting the cat out of the bag here … But you can make an AMAZING Sandwich Style White Bread with just a slight alteration to this recipe. See “Recipe Notes” below for the secret recipe variation – although it’s not a secret any longer …

Grain-Free Dinner Rolls

And another great use for this bread recipe, is to use it to make homemade dressing – just follow the steps below to make the sandwich-style white bread option and then check out my Savory Herb Stuffing recipe.

P.S. Don’t let the lengthy list of ingredients dissuade you from giving this bread a try. It’s really quite simple to make and the results will have you dreaming of just one more delicious bite!

Classic Sweet Brown Bread & Rolls (GF, DF)

Be sure to check out the recipe variation below for my secret Sandwich Style White Bread recipe – it's equally delicious!

Ingredients

  • 1/2 cup blanched almond flour
  • 1 tbsp coconut flour
  • 2 tsp caraway seeds, plus extra for sprinkling
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup creamy raw cashew butter
  • 2 eggs, plus 2 egg whites
  • 1 tbsp organic unsulfured molasses
  • 2 tsp pure honey
  • 1 tbsp water
  • 2 tsp apple cider vinegar

Instructions

  1. Preheat oven to 315 degrees. Grease a 8.25x4.25-inch loaf pan with coconut oil and line bottom only with parchment paper, slightly greasing the parchment as well. Please note: A standard 9x5-inch loaf pan will result in a longer shorter loaf. But it will still taste great! (If making dinner rolls, see *recipe note below.)
  2. In a small bowl, combine the almond flour, coconut flour, caraway seeds, baking soda and salt; set aside.
  3. In a large bowl, add the cashew butter, eggs, egg whites, molasses and honey. Using an electric mixer, blend together until smooth and creamy.
  4. Add the water and vinegar to the nut butter mixture and mix on high until well blended.
  5. Add the dry ingredients to the wet and mix until batter is smooth and creamy, making sure to scrape down the bowl as needed.
  6. Pour batter into the prepared loaf pan using a rubber spatula to to scrape all the batter from the bowl. Sprinkle top with extra caraway seeds, if desired.
  7. Bake for approximately 40 minutes until golden brown and toothpick inserted into center comes out clean.
  8. Allow bread to rest on stovetop about 10-15 minutes. Then run a knife along the edges and invert onto a cutting board to finish cooling.
  9. Once bread is completely cooled, use a serrated bread knife to slice and serve. Bread can be wrapped and stored in an airtight container in fridge for about 5-7 days, or frozen for up to one month.

Notes

* To make light and delicious dinner rolls ... prepare recipe according to instructions above. Instead of baking in a loaf pan, grease a 12-cup non-stick muffin tin with coconut oil. Spoon the batter into the prepared muffin tin, making sure to only fill each cavity halfway. Bake at 315 degrees for 15-18 minutes. Allow rolls to cool on stovetop for approximately 5-10 minutes. Then remove and transfer to a bread basket and serve. Rolls can be refrigerated for 5-7 days in an airtight container. To rewarm, place in a 250 degree oven for 5-8 minutes. Enjoy!

Sandwich Style White Bread recipe variation: To make an amazingly delicious white sandwich-style bread, simply omit the caraway seeds and molasses. Reduce the honey to 1 tsp. Follow all instructions for preparing and baking as noted in recipe above. Your family will hug you and you will hug yourself when you give this amazing sandwich bread a try! YUM!

Nourishing Cookies

One of my dear friends, Diana Bauman from My Humble Kitchen, just released a wonderful holiday cookbook – *Nourishing Cookies for a Healthy Holiday – featuring her family’s favorite whole-grain, naturally-sweetened cookie recipes.

And although I’m living a grain-free life, as I know many of you are as well, I just had to share this gorgeous book for two simple reasons …

First, for those of you here who aren’t grain-free and are either just starting out on your real food journey, or are tried-n-true veterans who are looking for some amazing delicious whole-grain holiday cookie recipes that taste great without compromising good nutrition, this book is for you! Second, many of you who are grain-free may have friends and family who are not. Guess what? Diana’s book is a beautiful way to share how holiday baking can be delicious, fun and nourishing.

nourishingcookies_coverimgIn typical fashion, I’ve also talked Diana into allowing me to share a fabulous recipe with you – a traditional honey-sweetened Spanish candy called Turrón – as a small taste of the delicious surprises that await you and your family in this beautiful whole-grain holiday baking book. Of course, I must admit that I hand-picked this particular recipe not only because it’s one of the two grain-free recipes in the book, but moreso because it represents a special family tradition for Diana and her family. And I believe building and celebrating family traditions is one of the cornerstones of creating special holiday memories that last a lifetime!

Turrón de Navidad (GF, DF)

Yield: 2 dozen candies

Turrón de Navidad is a traditional sticky, chewy candy made with three simple ingredients. This delectable recipe is just one of the many holiday treats featured in Nourishing Cookies for a Healthy Holiday.

Ingredients

  • 1 3/4 cup roasted almond slivers
  • 1 1/2 cups pure honey
  • 3 egg whites

Instructions

  1. Roast the almonds at 375F for 10 minutes mixing them up halfway through.
  2. In a medium sized saucepan over medium heat; gently bring the honey to a slow boil. Once it starts to boil, turn the heat off, and set aside.
  3. Whip the egg whites to a thick glossy meringue. Carefully, fold the meringue into the honey.
  4. Once the meringue has been folded into the honey, bring the mixture back up to medium heat constantly stirring
  5. for 15-20 minutes. The meringue honey mixture will soon increase in volume. As you keep stirring, it will condense itself until a thick caramel has formed. Also, the color will slowly change from a light brown to a deep burnt orange. The bottom of the mixture may start to burn a bit which is okay. It adds depth in flavor. *To test if your mixture is thick enough, add a bit to a plate and immediately place in the refrigerator. After a minute or so, if it hardens, your mixture is ready.
  6. Once the honey mixture has thickened, add the roasted almonds and mix through.
  7. Quickly pour the turron mixture into a parchment paper lined dish, 11” x 7”. Immediately, place another piece of parchment paper directly on top of the mixture which will allow you to press it down and prevent anything from sticking to it.
  8. Cool in the refrigerator for 2-3 hours before slicing and serving. YUM!

A Simple & Satisfying Thanksgiving Menu

Simple Thanksgiving Menu
My Martha-like heart often gets the best of me if I’m not careful. Maybe you can relate?

I get so busy buzzing around fretting over everything that needs to get done that I sometimes miss out on investing my time in “the better thing” – enjoying the people I’m serving, rather than getting caught up in the work of serving.

Holidays can be especially challenging. After all, it’s supposed to be Norman Rockwell style picture-perfect, right? As someone who struggles with everything being “just-so,” I thought it would be helpful (to me personally and hopefully for you) to share some thoughts about simplifying our holiday meal plans and instead focus our energies more fully on the relationships the Lord has given us.

I’m honored that the woman whom I consider to be a heroine in the art of being a Titus 2 woman – Sally Clarkson – has asked me to share these very thoughts on her encouraging website I Take Joy. So please join me there today to hear more on this topic, if it rings true for you as well.

As a follow-up to my post on Sally’s site, I thought it would be equally helpful to share with you my simplified Thanksgiving menu. It’s not to say this is the end-all, be-all holiday menu. It’s just a more time efficient menu that helps me avoid spinning out of control in working myself into a tizzy, and instead keep my priorities centered on spending lots more time enjoying all those special people that the Lord has brought into my life!

(can easily be made a day or two in advance and reheated;
if dairy-free, replace cream with coconut milk)

(can easily be made several days in advance)
