Bake-a-Buckle!

A “buckle” is a traditional dessert that combines fresh seasonal fruit and a thick cake batter with a light streusel topping. The result is a rich, dense cake with a moist crumb. Buckles are an excellent summer dessert, which can be served warm or cold, and either plain, or dressed-up with a dollop of homemade raw whipped cream.

Below are two of our favorite buckles – Berry-licious and Cherry Almond! You just can’t go wrong either way!

Strawberries and blueberries combine to make a “berry-licious” buckle!

I just love it when cherries are in season! One delicious way we like to enjoy fresh ripe cherries (besides eating them raw by the handfuls), is to bake up a delicious Cherry Almond Buckle.

Berry-licious Buckle

Yield: 8-10 servings

Berry-licious Buckle

Ingredients

  • 1 1/2 cups whole spelt flour (see note below about sprouted spelt flour)
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup organic buttermilk
  • 1/2 cup unsweetened organic applesauce
  • 1/4 cup butter, melted
  • 1/4 cup coconut oil, melted
  • 1/3 cup rapadura (or sucanat)
  • 1 tsp pure vanilla extract
  • 1 cup fresh organic strawberries, quartered
  • 3/4 cup fresh organic blueberries
  • 3 tbsp sliced almonds
  • 1 tbsp rapadura (or sucanat)

Instructions

  1. Preheat oven to 350 degrees. Coat a 9-inch springform pan (or 9-inch baking dish) with coconut oil.
  2. In a large bowl, combine flour, baking powder, cinnamon and salt.
  3. In a medium bowl, whisk together buttermilk, applesauce, melted butter and coconut oil, rapadura, egg and vanilla until blended.
  4. Add the wet ingredients to the dry ingredients and gently fold (using a rubber spatula) until blended.
  5. Add the berries and fold in, just until blended. Spoon the batter into the prepared baking pan/dish. Sprinkle with sliced almonds and one tablespoon of rapadura.
  6. If using a springform pan, place on a flat baking sheet in preheat oven.
  7. Bake until golden brown and a toothpick inserted in the center comes out with just a few moist crumbs, approximately 45 minutes.
  8. Be sure to let cool for at least 15-20 minutes. Then, run a sharp knife around edges of pan/dish to loosen cake from sides.
  9. If using a springform pan, remove outer rim and allow cake to continue to cool. Serve warm with a dollop of homemade raw milk whipped cream or homemade vanilla ice cream. (Recipe inspired by Eating Well.)

Notes

For increased nutrition, I recommend and use organic sprouted spelt flour for recipes in which soaking just doesn't yield a good end product. Sprouted flour contains a tremendous amount of beneficial nutrients because the grain is first allowed to sprout, and then is milled into flour (or you can buy whole sprouted spelt berries and grind your own flour).

Cherry Almond Buckle

Ingredients

  • 1/2 cup blanched almond flour (or substitute with whole spelt flour)
  • 2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup organic buttermilk
  • 1/2 cup unsweetened organic applesauce
  • 1/4 cup butter, melted
  • 1/4 cup coconut oil, melted
  • 1/3 cup rapadura (or sucanat)
  • 1 large egg
  • 1 tbsp pure vanilla extract
  • 2 cups pitted and halved fresh organic cherries
  • 3-4 tbsp sliced almonds
  • 1 tbsp rapadura (or sucanat)

Instructions

  1. Preheat oven to 350 degrees. Coat a 9-inch springform pan (or 9-inch baking dish) with coconut oil.
  2. In a large bowl, combine flours, baking powder and salt.
  3. In a medium bowl, whisk together buttermilk, applesauce, melted butter and coconut oil, rapadura, egg and vanilla until blended.

Homemade Raw Whipped Cream

Ingredients

  • 1 cup raw-milk cream
  • 1/2 tsp pure vanilla extract
  • 2 tbsp pure organic maple syrup

Instructions

  1. In a medium bowl, add one cup of raw cream.
  2. Using a hand mixer on high speed, whip cream until very thick (almost stiff).
  3. Add vanilla extract and maple syrup. Continue to beat until cream begins to show peaks. (Do not overmix or you'll end up with clotted cream.)
  4. This creamy-delicious topping is the perfect accompaniment to cakes, cupcakes, pies, fruit desserts and waffles.

Make Your Own Pizza

Personal pizzas make a great quick lunch or dinner! We make ours by using leftover homemade soaked tortillas. But you can easily make these using your favorite wholesome tortillas.

These little pizzas are so quick and easy to assemble – they’re a great way to get your Kids in the Kitchen with you!

The options are endless when you make your own homemade personal pizza! Shown above: Chicken Sausage, Marvelous Mushroom and my personal favorite, No Sauce Veggie!

Ingredients

  • 1 homemade tortilla
  • 3-4 tbsp organic pizza sauce
  • Organic mozzarella cheese

Instructions

  1. Preheat oven to 400 degrees. Place tortilla on ungreased baking sheet.
  2. Spread evenly with organic pizza sauce and sprinkle with mozzarella cheese.
  3. Bake approximately 8 minutes. Yum!

Ingredients

  • 1 homemade tortilla
  • 1 tsp olive oil
  • 1/8 tsp dried Italian seasoning mix
  • 1/8 tsp dried basil
  • Dash of garlic powder
  • Pinch of sea salt
  • Your favorite organic veggies
  • Organic feta and mozzarella cheese

Instructions

  1. Preheat oven to 400 degrees. In a small bowl, mix together olive oil, seasonings and salt. Brush oil mixture evenly across top of tortilla.
  2. Crumble some feta cheese and sprinkle with a little shredded mozzarella.
  3. Top with your favorite organic veggies (spinach, zucchini, broccoli, etc.) and another small sprinkling of mozzarella cheese.
  4. Bake for approximately 8 minutes. Veggilicious!

BBQ Chicken Pizza

Ingredients

  • 1 homemade tortilla
  • 1 1/2 tbsp wholesome BBQ sauce
  • 1/2 cup leftover grilled organic chicken, diced
  • Organic mozzarella cheese
  • Your favorite organic veggies (sliced zucchini, mushroom and spinach are great with this pizza!)

Instructions

  1. Preheat oven to 400 degrees. Evenly distribute BBQ sauce on top of tortilla and sprinkle with some shredded mozzarella.
  2. Top with diced grilled chicken, your favorite veggies and another small sprinkling of mozzarella cheese.
  3. Bake for approximately 9 minutes. A BBQ-lover’s delight!

Philly Cheese Steak Pizza

Philly Cheese Steak Pizza

Ingredients

  • 1 homemade tortilla
  • 1 tsp olive oil
  • Dash of freshly ground pepper and sea salt
  • Leftover precooked, pasture-fed steak, thinly sliced
  • Sautéed onion and green/red bell pepper
  • Sliced mushroom
  • Organic mozarella cheese

Instructions

  1. Preheat oven to 400 degrees. Brush olive oil evenly across top of tortilla and add a dash of freshly ground pepper and salt. Then sprinkle with some mozzarella cheese.
  2. Thinly slice leftover steak and lay across top of cheese.
  3. Sauté some sliced onion with some sliced organic green and/or red bell peppers in a little olive oil, until al dente. Add to top of steak.
  4. Top with some sliced mushrooms and another small sprinkling of mozzarella cheese.
  5. Bake for approximately 8 minutes. A steak lover’s dream!

Turkey & Apple Quesadillas

Apples and cheese go so nicely together, especially when they’re all snuggled up together with sliced turkey in a warm buttery tortilla blanket! Mmm!

Turkey & Apple Quesadillas

Yield: 2-4 servings

Turkey & Apple Quesadillas

Ingredients

  • 2 gluten-free tortillas
  • 1 1/2 cup shredded raw cheddar cheese
  • 6-8 slices of nitrate-free roasted turkey
  • 1 medium organic apple, cored and thinly sliced
  • Optional: Baby spinach leaves

Instructions

  1. Heat a large skillet over medium heat. Meanwhile assemble two tortilla sandwiches as follows:
  2. Take two of the tortillas and layer each of them with 1/2 cup of shredded cheese per tortilla.
  3. Then add turkey, apple slices and spinach leaves, if desired.
  4. Sprinkle with 1/4 cup of shredded cheese per tortilla.
  5. Top with the remaining two tortillas.
  6. When pan is hot, butter the bottom of the pan and add one assembled tortilla sandwich.
  7. Cook about 2-3 minutes until tortilla is golden brown.
  8. While the tortilla is cooking, lightly butter the top. Then lift with spatula and carefully flip over.
  9. Cook another 2-3 minutes until tortilla is golden brown and cheese is melted.
  10. Transfer to a cutting board. Using a pizza cutter or sharp knife, cut tortilla into triangles.
  11. Enjoy these delicious tortillas with a side of Caribbean Carrot Salad.
