Like most families, there’s no such thing as a “typical” day at our house, other than one of my favorite days of the week – Meal Planning Prep Day!
That’s the day I spend some time prepping meals for the week ahead. Because frankly, if I didn’t, getting a homemade healthy meal on the table just wouldn’t happen!
Because meal planning is such a wonderful tool to save time, money and stress, I am always excited to share about how truly easy it is to create a weekly meal plan and to take a little time to prep for the busy week ahead.
Of course, just mentioning the benefits of scheduling a prep day can bring a lot of questions to mind …
• “What types of things do you do during your weekly prep day?”
• “How long does it take?” “Is it really a ‘day’ or just a block of time?”
• “What if I don’t have time to schedule a prep day?”
That’s why, when I learned that the theme for September for Keeper of the Home contributors was to write about a day in our own personal lives, I got excited about the opportunity to share what an actual meal planning prep day looks like here at The Nourishing Home.
Yet, please keep in mind, if you opt to read this little snapshot called A Day in the Life of a Meal Planner, that there are lots of ways you can plan to prep ahead, whether it’s scheduling a chunk of time in one day, or making a simple list of daily prep tasks, like my dear friend Tiffany … however you opt do it, prep time is always time well spent!

Hi Kelly, Many thanks for all the great ideas of your site. After reading your “day in the life” I’m wondering, how long do the prepped veggies last in the fridge?

Hi, Devorah. It depends on what type of veggie. Firm veggies like carrots, celery, zucchini and onion are generally fine pre-chopped and stored for up to 3-4 days. However, other softer veggies don’t do well pre chopped and stored for an extended period of time. Those are better used the next day. Freezing veggies (for use in the crockpot or soups can also be done, but not all veggies freeze well (like potatoes for example).
