My boys go bananas every time they catch a whiff of this simple, yet decadent Banana Créme Brûlée Oatmeal Bake in the oven. That’s because it’s so creamy and delicious – just like it’s namesake.
In fact, when we have company in town, this is a definite go-to breakfast recipe, because it’s always a favorite. It’s funny how something so simple as a warm, delicious breakfast can result in so many smiles and accolades.
Since my friend Stephanie at Keeper of the Home was on the hunt for some new breakfast options, I thought I’d share this family favorite with you and her readers over at her inspiring site. So please pop on over to check it out and say “hi!”
My only wish is that I could come up with a grain-free version for me (and for those of you who are grain-free as well). Being the only grain-free person in the house can be a challenge – especially when this is in the oven.
So, what’s a grain-free person to do? Personally, I curb my creamy banana craving with this scrumptious Banana Split Breakfast Parfait. It ain’t an oatmeal bake, but it’s definitely a satisfying substitute!

No I did not. It’s a good idea to soak oats for increased nutrient absorption and better digestibility – we certainly do that with more everyday type oatmeal recipes, as you can see on my site. But this is a special occasion dish and using the oats dry really makes this dish spectacular because they soak up the coconut milk, which results in an amazing creaminess that I honestly really miss – boo hoo for me! LOL! Since I’m grain-free. But you could certainly make this with soaked and rinsed oats. You’d just need to reduce the cook time and the amount of coconut milk since the oats would already be plump and very moist. It may result in a more pasty end result due to this factor, but the flavor should still be outstanding. Hope you all have a super Thanksgiving. Blessings, Kelly 🙂

Hi, Laura. Here is the coconut milk I use, which is a 13.5 oz. can: http://amzn.to/1i2MqI6 (aff.link). You can substitute with whole milk or a non-dairy “milk”, but it won’t be as creamy. Hope this helps. Blessings, Kelly

Does the coconut milk make it taste coconut-y ? Not sure I would like that, so just wondering.

It depends on how sensitive you are to coconut milk. I don’t find it to be ultra-coconutty in flavor. But if you really dislike coconut you may pick up on the nuances of it and it may bother you. If so, you can always substitute with 1 cup of whole milk and 2/3 cup cream. Hope that helps! Easter Blessings to you! 🙂 Kelly

Could you substitute honey for the maple syrup?

Yes, you can. I would recommend using just 3 tbsp of honey though because it tastes much sweeter than maple syrup in my opinion and I do not care for over sweetened oatmeal. That way people can add additional honey to taste, if needed. Hope this helps. Enjoy! 🙂
