This is such an easy recipe, and the chicken came out so good. My husband also grilled some fresh pineapple rings brushed with a mixture of honey and lime juice and I made a version of your black bean recipe. My family loved it all. Thank you!

Would it be possible to broil this or cook it an alternate way? Grilling just isn’t possible for us right now 🙁 and this sounds amazing.

Hi, Felicia. Yes, broiling would be a great option. It won’t have the classic grilled flavor, but should still be quite delicious! Blessings, Kelly 🙂

Kelly, thanks for all of the info you share in your blog. We love this recipe. We always have leftover salsa and my wife eats it by the spoonful. I like to subtract 1/2 cup of pineapple, and add 1/2 cup of mango. Cheers.
