Just wanted to say thank you for all of your hard work with these menu plans. I turn to them quite often these days, as we have a new addition to the family and my creative juices aren’t flowing like they used to :). As a matter of fact, I have been struggling with even preparing healthy meals and unfortunately have succumbed to several ‘convenience ‘ meals from the store as we have a 5 year old as well. Any ideas for a sleep deprived mom of two with a husband who is gone 4 days out of the week?? We are getting a liitle tired of cheese quesadillas arond here :). Thanks again and blessings to you!

Hi, Christina! You are so welcome! And thank you for your kind words of encouragement! You’re in that tough season right now with a newborn and small children. It’s hard to maintain the energy to cook healthy when you’re sleep deprived, but the irony is, it’s all the more important to feed yourself and your family nourishing foods during this stressful season. The best course of action is to keep things simple, especially since you’re hubby is away and so you don’t have help with cooking meals and doing dishes. A meal plan is a must to help you plan for healthy, yet simple meals and you can make a meal plan while you’re nursing, or have a free moment in the evenings after the little ones are in bed. Again, keeping the meals very simple is the key and plan for leftovers so you don’t have to cook every night. Grilling or roasting large portions of meat that can be used in various meals throughout the week. Using your crockpot to make one-pot meals or soups, with enough leftovers for another night. These are some ideas that you may find helpful. Prayers and blessings are with you – hang in there! As you know, these baby days speed by so fast!! 🙂
